Wakula's First Attempt at Vegetable Stew

This is really good. I do leave out the celery salt, cayenne and bay leaves though. I've tried it with bok choy and with swiss chard at different times and they are both good. I do tend to use pinto or white kidney beans instead of the black beans because that's what my kids like. Yes, my kids eat this. They don't love it, but they don't complain or refuse to eat it, which is good.

Curried Coconut Chicken

Very good. I did drain the chopped tomatoes and simmered for 40 minutes - which causes sauce to be thicker. I will make it again.

Teriyaki Wraps

Recipe way too salty and I didn't even put in the salt. I'm going to try it again, though, without the soy sauce. General taste was good, just needs less salt.

Spinach and Mushroom Enchiladas

Very yummy recipe. Don't listen to the other reviewers about not using oil. If you don't, the tortillas will crack, the oil makes them soft. I tried it both ways. Also, I used frozen spinach from a bag and it was still good.

Broccoli Potato Bake

I've made this about 4 times now and really like it. It needs about 1 extra teaspoon of salt added to the cheese mixture, if you use unsalted butter. Next time I make it I'm going to try using Gruyere cheese, which is a milder swiss cheese. I also use fresh broccoli, steaming it before putting it in the baking dish.
