Barbie's Tuna Salad

Reviewed: Jun. 21, 2013
After all the great reviews, I just had to give this recipe a try and boy am I glad I did. The 1st time I made this I thought it was way too much mayo... But I followed the recipe to the T anyway... The taste was amazing... But it was a little too soggy for a sandwich...then I re-read the 'most helpful review' and realized I probably didn't drain the tuna as much as I should've. I made this again, making sure to drain the tuna really well (yes, with the lid) and the texture was perfect -as was the taste. I will be making this regularly now. Great recipe Barbie -thanks for sharing.

Eve's Chicken Quarters

Reviewed: Sep. 6, 2011
I just made this; easy to follow recipe, very tasty. I took others' advice and used only 1 cup of water. I also used Lipton's Instant Rice; Chicken Flavored since that's what I had on hand. I also did light sour cream to cut down on the calories a bit. Next time, I think I'll season the chicken while baking at 1st, since it could use a bit more flavor, but overall good recipe. Thanks for sharing... will be making this again.

Chicken Chilaquiles

Reviewed: Nov. 7, 2010
This was so easy to make an so delish! I did not have all the needed ingredients on hand, so this is what I did: Had some shredded roast chicken that I needed to use up, so I used that instead of the cubed chicken & chorizo. I sprayed my casserole dish with cooking spray, tossed in crushed tortilla chips, a layer of my shredded chicken, a layer of canned corn and topped off with the green enchilada/sour cream mixture and 2 cups of shredded mont. jack cheese for 20 mins. My son could't get enough of it. We had this for brunch.

Spicy Rapid Roast Chicken

Reviewed: Jul. 18, 2010
This was very easy & quick to make. The flavor was good and chicken was moist with perfectly brown/crisp skin. I followed the recipe exactly, but next time I think I will double the spices as other reviewers suggested as I would have preferred more flavor. I definitely love the roasting method. Thanks for sharing.

Baked Pork Chops I

Reviewed: Jul. 8, 2010
OMG, this is absolutely delish! I did everything the same, except I only had almond milk on hand, so that's the type of milk I used. The sauce/gravy was the best part...definitely will double that next time. Chops were tasty and tender... Will be making this again. Thanks for sharing! ****Revised review*** I just made this again and used non-fat milk and all of the same ingredients.....yummy. Not too much work and delish!***

Baked Teriyaki Chicken

Reviewed: Jun. 15, 2010
A-mazing! I thought to myself, so many people can't be wrong and followed the recipe to the T. I did double it and used 6 pieces on bone-in thighs (skin removed) and I lined an 8x8 pan with foil and baked for 30 mins at 400, flipped the chicken and baked for another 30. That's it! Simple & so delish! Paired with a side of brown rice with steamfresh asian medley veggies for a complete meal. Try it, trust me. Thanks for sharing!

Shredded Beef Enchiladas

Reviewed: May 22, 2010
DELISH! I have made these numerous times (and even used just Part 1 for other stuff) and it's ALWAYS a hit. Description says it all, a little time-consuming, but well worth it. Give it a try, you won't be dissapointed! Thanks for sharing Christie!

Easy Mexicali Pork Chops

Reviewed: Apr. 21, 2010
My kid & I liked this. Followed recipe to the T, with mild, jar-salsa poured over the top and it was not only pretty good, but VERY easy & quick to prepare. Not to mention, easy on the pocket (used thin cut pork chops). I whipped this up in no time & paired it with a side of corn. Will be making this again. Thanks for sharing!

Baked Apricot Chicken

Reviewed: Apr. 15, 2010
This is amazing and so easy to make. I've made this 4 times already and I must say, I prefer it better with Catalina dressing rather than French/Italian, which I tried out too. I made this with thighs and is just perfect (+cheaper, too). Definitely a keeper. Thanks for sharing! ***Just made this for a 5th time & was asked for the recipe by my own momma. TIP: Bake at 350 for 1 Hr, flip the chicken over, baste with juices & pop back in the oven for another 15-20 mins to get a caramalized effect. And definitely use Catalina over French/Italian, trust me***

Crispy Oven-Fried Fish Fillets

Reviewed: Mar. 2, 2010
Super easy to make and my kid who is a picky eater, loved it. I used Tilapia this time around since that is all I could get my hands on at the grocery store. I cooked it for 15-20 mins since the chunks of fish were on the thick side. I'll be making this again, thanks for sharing...

Simple BBQ Ribs

Reviewed: Nov. 30, 2009
OMG! Cannot praise this recipe enough. I followed the recipe to the T and used pork baby back ribs as one of the reviwers suggested. I also used Sweet Baby Ray's Honey Chipotle BBQ sauce, almost the entire bottle since I decided to brush them half-way through the baking process. They were done after 1 hr 15 mins. Simply delish and oh-so-simple. I will always make my ribs this way!!! Thank you so much for sharing :)

Simple Ranch Chicken Macaroni Salad

This is great. I love that you can make this ahead. I took some of the other reviewer's advice and added my own real chicken chunks. I omitted the olives, but that's only because I didn't have them on hand. I think I've found myself a keeper with this recipe. Thanks for sharing!
