Pumpkin Cheese Bread II

This was really really good. I made two last night and one my husband and I shared and there was a little bit left for him for breakfast. The other I brought to work and it is was finished before I could finish my review. Please do put a small amount of batter in the bottom of the pan as others said. I thought I did, but there wasn't much batter left to cover it. Turned out pretty though! I forgot to get a picture and now there is none left! Thank you Tina!

Chewy Brownie Cookies

WOW!DELICIOUS! Can I give it 10 stars? This Cookie was chosen by Unanymous Vote to replace the Chocolate Cupcake we have made for years along with our Scout Cookies for Fundraising here in Yucatan Mexico. Often it has been suggested we make Brownies, but these are so much better. And I love the comment (Which I cannot find now) If a Brownie and a Chocoloatechip cookie had a baby this would be it! OH yes we have a winner. I must say I found this récipe since I needed something to take to our meeting last night. So I did a search here for a récipe that had eggs and Brown sugar, and no butter, margarine or oatmeal which I was out of. Ths one came up, I loved most of the comments and decided to make it. Then as I was mixing, I realized I only had a cup of flour. So I added an extra 1/2 cup of Cocoa. Tasted GREAT! I usually follow directions exactly before playing with it, and today I am going to the store and I will make as directed, - who knows it may be even better. I reccomend this......Yum Yum Thank You! Thank you!

Japanese Peanut Salad Dressing

Excellent! Really a refreshing dressing with a wonderful flavor! I made as directed but added Splenda instaed of the Sugar, and it is delicious! Thanks!

Buffalo Chicken Dip

If you like it hot this is for you! I used Tabasco, I don't have Franks here in Mexico, and figured it must be simliar. I do not know if that is why is was so hot, or if the recipe is this way normally, but it seemed very hot to my husband and I. I added Grated cheese as some suggested, and in the end I added more cheese and some crema to see if I toned it down some. Well it still tasted hot, but since I only had one other hot item on my menu, I figured well, some people will like it. Well, some did avoid it, but there were other dishes, But SEVERAL people RAVed over it. And Asked for the recipe... I had about 12 different appetizers, most form this site, and this was a big hot with the spicy food crowd. I am glad I tried it. Thanks!! I will make this again, I am sure I will be asked for it.

Avocado Quick Bread

I used our local Avocados (Yucatan) And so the color wasn' so green. Noone could guess that there was avocado in this. I was given about 10 avocados from a friend who had an excess production, so I inmediately came to All recipes to see what recipes for avocado there were. I made several loaves of bread and some muffins. These were SOOOO Good! Thanks!!

Chicken Nut Puffs

Hi! After reading all the reviews I was going to double the seasoning, but then I thought about my guests who cannot eat spicy foods, and decided to leave it just as written at least for this time. This was the last dish I made and so my guests ate them hot from the oven and Boy, this was the Hit of the party. I made a double batch. The menu was all appetizers and this one is the only one there wasn't a piece left at then end. I served it with a spicy Chipotle Mayonaise (From the bottle) and so those who wanted a bit of heat could dip them in that. Karen, these were great! And easy! I will make these again and Again!

Ranch Ham Roll-Ups

These were soo Good I had another recipe which is Similar to this one, that I couldn't find, but I remember it had olives, so I combined both and added Chopped Black Olives to half the bacth of this one. Most of my guests liked the ones with olive even more! Thanks so much!

Appetizer Chicken Kabobs

I made these for my birthday, we had all appetizers. They were Delicious. I followed the recipe in ingredients, but marinated the day before, then broiled these in the oven. My husband Suggests adding a cube of Jicama (Which is what we use here I mexico when we cannot find Water chesnuts, texture is the same). Si I will try that next time, just to add some crunch. Thanks!

Pecan Pie V

My whole Family LOVES this pie. We tried several pies in order to choose the best tasting one. Evn had friends over to help make the decision. We made these pies as Christmas presents last year and this is now the only Pecan Pie I will make. How wonderful that the best tasting one, is also the easiest and uses ingredients I always have (I only used to buy corn syrup for pecan pies). I love that I can make one whenever I want. Thank you so very much Elaine!!!!

Honey Pancake Puff

Easy Broiled Lobster Tails

Wow! Delicious and so simple. We live in the Yucatan and I was recently given a bag full of little lobster tails, and this recipe jumped out at me. They were simpy delicious. We accompanied them with melted butter and garlic. THANK YOU!

Cranberry Cream Pie II

This was really delicious and everyone who tried it said it was just great. I ended up mixing dried fruit and dried cranberries as I made several pies and did not have enough cranberries, and it was still great(which means I added more water and less sugar to the fruit topping). I didn't change anything else and it was firm enough. I will definitely make this again. Thanks!
