Salsa Chicken Rice Casserole

This is an easy dinner to throw together. I mixed up the onions, soups and cheeses all together to save time and added corn, hatch chili peppers and pinto beans that I had in the pantry. I only used 1/2 the cheese the recipe called for. I topped with the salsa then added a bit more cheese and baked. Excellent. Next time I make it I will try to do the lowfat version...I bet that's still just as good. Thanks for a great recipe.

Quick and Easy Chicken

I'm giving this two stars, because it wasn't God awful but it certainly wasn't as great as the other reviews have claimed. And what's up with those that give it 4 stars and then say "it was just ok"? This would be a great recipe for a child to make and enjoy. I thought it was pretty crappy and too sugary (and I used only a bit of sugar.) It just lacked depth of flavor. For those that said it was a glorified bbq sauce: You are correct. I will say that by basically frying the chicken first and then simmering it, this makes for a really juicy meat.

Sweet Potato Casserole I

This casserole is incredible. I used 3/4 white sugar and did the full cup of brown sugar and didn't think it was too sweet...we thought it was just right. This is so much easier than you think it's going to be when you read the instructions, too. This is my second time making it, and it's gone so fast!

Basic Crepes

My husband is NOT a cook and made these perfectly. They were amazing. He followed the advice of reviewer Morley and added the dry ingredients into the wet ones instead of the other way around...perfection. He served crepes filled with Nutella and topped with strawberries, bananas and powered sugar. Jamieson Clem is awesome.

Creamy Macaroni and Cheese

I am the queen of giving recipes 5 stars, but this one just did not taste good to us. My husband is a mac and cheese FREAK and loves anything with cheese, but not this one. I am an experienced cook, and had no problems with the look of the dish...my husband and I just didn't care for the taste of cheddar and parmesan together with the milk/chicken broth mixture (and dijon). Even the consistency of the flour/butter/broth mixture was perfect.

Chicken Piccata II

This is a fabulous recipe. I've made Ina Garten's Chicken Piccata, but it didn't turn out half as well (and we love Ina G. in this house). Make sure you don't over-batter the chicken, otherwise it won't turn out well: over-flouring/double-dipping will make fried chicken, and your sauce will make it soggy. I used the cornstarch to make the sauce thicker. Next time I'll add capers. Jamieson Clem loved it, and the leftovers are awesome over pasta. Thanks for a great recipe.

Pork Chops with Blue Cheese Gravy

This was excellent. This is a perfect dinner for a quick weeknight when you have little time. You can easily control the amount of bleu cheese to cut down the richness. I served this with couscous, and it was just perfect. Jamieson Clem went nuts over this dish. SO EASY!

Best Chocolate Chip Cookies

Wow. These turned out perfectly. I used the KitchenAid mixer for the dough. They look like they were made by a professional baker - very pretty and perfect for gift-giving. They taste amazing. Too bad Jamieson's out of town -I'll try not to eat all of them before he returns. I followed the recipe exactly. Each batch took 15 minutes to bake (I have an oven thermometer to ensure temp was at 350 degrees.) Thanks for a perfect chocolate chip cookie.

Baked Onion Dip II

This is a really quick and easy dip to prepare. I whipped the ingredients together in no time before a New Year's party, and then jumped in the shower. When I was out of the tub, the dish was ready. I wish reviewers would stop complaining about the grease. There is mayonnaise in the dip, of course it's greasy. Very easy to repair the grease issue, though-just get a few paper towels and sop it up. This dip was gone in about an hour. Thank you for the recipe - and Jamieson loved it.

Chocolate Mint Cookies I

These cookies are excellent! I followed the recipe exactly, and I used the Andes Creme de Menthe candy. Turned out perfectly. I even refrigerated my dough overnight, because I started too late in the evening. When I resumed baking, they were just fine after having the dough in the fridge all night. Jamieson loved them.

Garlic Spaghetti I

I was looking for a quick, easy meal tonight. This was perfect - very easy and quick to make. I added a bit less of the butter and olive oil, added extra garlic and loads of parm. Even Jamieson loved it. It was so good!
