Quinoa Chard Pilaf

Spinach and Leek White Bean Soup

This is a great soup!! I changed the recipe a bit: added some carrots, had no spinach so substituted chard, used vege broth instead of chicken, and added extra garlic. Definitely needs more broth/water than called for. Thanks for sharing!!

Whole Wheat Rigatoni and Cauliflower, Wilted Arugula, Feta & Olives

This recipe was ok. Felt like it was missing something, though not sure what. Might make again with beans hoping it will enhance the flavor as the recipe is very healthy and could be used as a good base recipe.

Easy Mushroom Rice

I really liked the flavor of this recipe. I live at high altitude so it took a considerably long time for this to cook and a much larger amount of water than called for in the recipe. If you're in the mountains, just keep adding water while it's baking otherwise the rice comes out crunchy. Used fresh shrooms sauteed in butter instead of canned. Really good!! Thanks for sharing!

Eggplant Tomato Bake

LOVE THIS!!! Am eating it as I write and I have to say it's one of the best recipes I've found on this site. I was concerned about no garlic in the recipe, so I used a roasted garlic and tomato sauce and it turned out perfect!! Will make and share this one. Thanks!!

Smashed Potato-and-Broccoli Casserole

This was yummy. I used a little less water than the recipe calls for and it did not turn out runny as some of the other reviewers said. I also added some miced fresh garlic and was generous with the red pepper as I like things spicy. Excited to try varitions with different veges. Will make again. Thanks for sharing the recipe!!

Cheesy Vegetable Chowder

This is fantastic!!! Easy to make, you can add whatever vegetables you have on hand. I used broccoli and added some canned black beans along with carrots, potatoes, and onion and used vege bouillon and it turned out perfect. Excited I have an enourmous pot left. Will make again. Thanks for sharing!!!
