Turkey and Quinoa Meatloaf
WOW! I read the reviews, and thought, "These people are just trying to talk themselves into the fact that this healthy recipe is delicious".... but it ACTUALLY is.. I always toast quinoa in the pan before cooking. I used beef broth as the liquid for the quinoa, skipped the salt in the meatloaf recipe and topped with a mixture of 2 tsp Worchestershire, 1 tsp of water, and 1 Tbsp of mustard (no brown sugar). SO GOOD.

Chocolate Chip Cookies II
These cookies are very easy (I didn't even need a mixer to make them, just a spoon) and they stay nice and soft. I didn't need 2 full cups of chips, though, and they took longer to bake than 5-7 minutes in my gas oven. They're not too sweet. I was a little worried to add the hot melted butter to the egg/sugar mixture for fear that the eggs would cook, so I let the butter cool for a few minutes after it melted. Overall, a great recipe, thanks for sharing!

Spinach and Mushroom Frittata
Delightful! Used it for brunch for 5, probably should have made two. I used fresh spinach and steamed it first, then drained it well and squeezed the excess fluid out. Since there isn't a buttery crust, it was a delicate egg dish that satisfied the craving of a vegetarian for an egg-bake.
