Slow Cooker Barbeque

Reviewed: Jul. 4, 2006
I doubled the recipe for a 4th of July barbeque. Added two bottles of Kraft barbeque sauce and cooked on low about 11 - 12 hours. Meat shredded very easy. Served the next day reheated with extra sauce - everyone really loved. Great and easy recipe.

Banana Muffins II

Reviewed: Jun. 14, 2006
Yummy and easy to make. I did use lo-fat sour cream in place of the butter. This is terrific basic recipe that you can tweak any way you like. Very easy to make and the whole family practically ate all of them. I bake at 325 degrees because I used mini muffin tins. I used 1/2 c. whole wheat flour and 1 c. white flour. I also added: 2 tblsps. flax seed - flax seed is really healthy for you and my family doesn't even notice; 1 tsp. cinnamon, 1 tsp. vanilla and 1 c. nuts. Thank you for the recipe - I've added it to my recipe box!

Fresh Southern Peach Cobbler

Reviewed: Jun. 10, 2006
Thank you for this recipe! I doubled it and baked it in a 9x13 pan - it turned out great. I would like a little more peaches, though. My husband liked it just the way it was and the kids gobbled it all down. Next time I will add a few extra peaches or hold back a little on the batter topping. I felt like I was in Georgia... we served with homemade whipped cream. Very yummy!!!

Pistachio Fluff Fruit Salad

Reviewed: Jun. 1, 2006
I really liked this stuff and ended up eating almost all of it because the kids and hubby don't like this type of dessert. I will make for a pot luck or group gathering so I don't eat it all. Next time I will add a little coconut and marischino cherries!

Strawberry Avocado Salad

Reviewed: May 31, 2006
This was a delicious and easy salad. My husband and I really liked, although the kids didn't care for "strawberries and lettuce mixed together." I won't have too often, though, because it is very high in fat.

Zucchini Cobbler

Reviewed: May 28, 2006
I thought this was just o.k. Per a previous comment, I think this recipe would work best with large size farm fresh zucchini. I usesd the typical zucchini you find in the grocery store. Mostly, I'm only giving it three stars because there was not nearly enough filling, and only using half the topping mix was still too much.

Very yummy and easy to make. I used tomato sause and added some seasonings to it - basil, garlic, onion powder and parsley. I also used shredded mozzarella on top. Everyone enjoyed and I will make again.

5 stars for the cream filling. I used a different chocolate cupcake recipe, but this one is probably great, too!!

Banana Muffins I

Reviewed: May 3, 2006
The kids are home sick. Perfect for today. I didn't have sour cream so I used nonfat vanilla yogurt. I beat the bananas, eggs, yogurt and vanilla well and then added the mixed together dry ingredients. I also added walnuts. Very nice light, fluffy texture. The kids loved them!

No-Crust Spinach Quiche

Reviewed: Apr. 25, 2006
This recipe was very easy to make - my eleven year old actually did most of the work. I thought just a bit too salty - I would only use 1/8 tsp. salt next time. Seems adaptable - next time I might add bacon.

Three Cheese Baked Pasta

Reviewed: Apr. 22, 2006
My kids LOVED this recipe. I only used 1/2 pound organic pasta and I did substitute spaghetti sauce because that is what I had in my pantry. Everything else the same. Everyone even liked leftovers and I imagine this would freeze really well.

Big Guy Strawberry Pie

Reviewed: Apr. 22, 2006
I made this with my 4 1/2 year old daughter. Very easy and very yummy - everyone loved. I sprayed a little non-stick spray on my pie pan before baking the crust, and had no problems with the crust sticking like some other people mentioned. Will make again for company!!!
