Rice Cereal Energy Bars

Reviewed: Jan. 30, 2007
I give these five stars but for some reason my kids didn't like as much as I did. I didn;t have cherries or apricots so I didn't add. Nest time I will only use 1/2 the amount of sugar called for just to make a little healthier. Thanks for the recipe!!

Baked Slow Cooker Chicken

Reviewed: Dec. 15, 2006
It doesn't get any easier than this. I did use garlic salt and added 3/4 cup chicken broth. Probably didn't need to add the broth. The chicken legs and wings fell of the chicken - very moist and tender. The whole family loved and I will make again.

Meatball Sandwich

Reviewed: Dec. 8, 2006
My kids loved this , but next time I make will try a few suggestions about adding some "zing" to the flavor. A great starting point...will make again and tweak a bit. I like the crock-pot suggestion.

Russian Tea Cakes I

Reviewed: Nov. 20, 2006
I also was looking for the "little white cookies my mom used to make for Christmas" as another reviewer mentioned. These fit the bill perfectly. I like the measurements to powdered sugar and flour. Betty Crocker calls for two cups flour and I think they are not as good as these. Will add to my Christmas cookie list!!

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Nov. 20, 2006
I just made a double batch for Christmas (I make ahead and freeze) and it is the best fudge I have ever made (I'm typing this while licking the cooking pot clean!). I followed the directions exactly and brought to a boil and mixed while it slightly boiled for a full five minutes. Creamy and smooth. Be sure to measure the vanilla, chocolate chips and nuts ahead of time. That way you can just pour them in - mix well. Just wait until my son finds it - this fudge might not make it to Christmas

Chicken Enchiladas I

Reviewed: Nov. 14, 2006
My husband, 12 year old and myself all enjoyed this dish but my five year old thought it was "too spicy" even though I hung back a little on the chili powder. I used whole wheat tortillas to add fiber and skipped the bell pepper because I knew my son wouldn't eat it. I forgot to add the 1/2 cup water and it turned out fine. I used salsa instead of taco sauce because that is what I had. Saving to my recipe box - will be making again!!

Pumpkin Chip Muffins

Reviewed: Nov. 10, 2006
I will be making these as part of an assorted goodie plate for the holidays!! I agree with some previous comments, and made the following changes: I added 1/2 tsp nutmeg. I used 1/2 cup oat bran, 1 cup whole wheat flour and reduced the white flour to 1 1/2 cups. I reduced the sugar to about 1 1/2 cups. I only added 1/4 cup oil and since I didn't have applesauce used 1 cup lo-fat sour cream. Making these healthy changes still creates a yummy muffun!!

Waldorf Salad II

Reviewed: Nov. 9, 2006
This is definitely 5 stars based on ease and apperance. I added purple grapes chopped in half about 1 cup) - it looked very pretty! I also didn't peel the apples - more fiber and they don't get discolored. My daughter and I really enjoyed - was good alongside some broiled chicken. I will make again!

Pumpkin Roll II

Reviewed: Nov. 5, 2006
Very pretty and delicious. I made two rolls - on the second one I added some ground ginger (1/2 - 1 tsp.) and nutmeg (1/2 to 1 tsp.) I liked that roll a little bit better. I got rave reviews when I took them to a Halloween party. Will be making again!!

Health Nut Blueberry Muffins

Reviewed: Oct. 17, 2006
Next time I will definitely double the recipe!! Very good not to mention a lot healthier than the usual b.b. muffin. I didn't have wheat germ so I added extra quick cooking oats. As per anotther review I substituted sour cream for half the milk (I only had Lactaid in the fridge so I used that instaed of the buttermilk. Don't you love a good recipe you can tweak a little!!!)

Chicken Enchilada Casserole II

Reviewed: Oct. 15, 2006
Everyone liked this tatsy casserole. Mine came out almost dip-like like another reviewer mentioned. I would add a little more chicken and beans and/or leave out 1/4 salsa, sour cream and cream of chicken soup next time. Will make again - a good crowd pleaser.

Easy Lasagna III

Reviewed: Sep. 29, 2006
I used no-boil lasagna noodles which made it even easier!!! My family loved this lasagna - everyone wanted seconds. I did add some basil & oregano to taste and mozzarella cheese melted on top. I also used twice the amount of tomato sauce. I know - sounds like a lot of changes, but isn't that why we read the reviews and rate the recipes. I get a lot of good ideas from the comments. Hope this helps. Very easy and good recipe!!

Blueberry Zucchini Bread

Reviewed: Sep. 25, 2006
I forgot to rate this when I made it but it was very delicious. I always use half white four, half whole wheat to add some fiber. I also add two tablespoons flax seed to up fiber and make it healthier, and replace half the fat with applesauce. No one notices the difference and it makes it a bit healthier!!

Easier Chicken Marsala

Reviewed: Sep. 25, 2006
I made this and added 1 cup Marsala wine to have more sauce, as per some of the other reviewers suggestions, but it still could have used more sauce. My husband really liked this recipe. I enjoyed it, but it didn't have a nice brown color like what I think chicken marsala should have, and the flavor ust wasn't wuite what I'm looking for. Other recipes call for the addition of sherry - I will try a different marsala recipe next time.

Italian Wedding Soup I

Reviewed: Sep. 10, 2006
I made with ground beef but next time would use 1/2 beef abd 1/2 ground pork. I also used frozen spinach and I would only use 1/2 the amount of pasta called for like a previous reviewer mentioned. I would like to make this soup again. Good recipe but I will try another one to see how it compares.

Pineapple Upside-Down Cake VII

Reviewed: Sep. 9, 2006
I made this with Betty Crocker White cake mix which called for 1/2 cup butter. Since there is butter in the topping I thought it had a very buttery taste. It came out looking beautiful, though. Nice and light cake texture - not too dense, and nicely browned on the outside. Watch it doesn't burn. Everyone really liked. I would add extra pineapple on top next time and try home made cake mix or another box brand that doesn' call for butter.
