Sour Cream Pork Chops

Reviewed: May 18, 2007
This is a very good recipe. I did use chicken broth instead of bouillon (didn't have any) but otherwise followed the instructions. Everyone (including the kids) said "yum." Will make again. Thank you for the recipe!!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Reviewed: May 17, 2007
Wow - very yummy!! I used half whole wheat/half white flour. Also half the vegetable oil and half applesauce. These two changes make them a little healthier. I also baked at 325 degrees so as not to burn and watched until done. I made regular cream cheese frosting. They turned out delicious. Will make again and maybe add raisins. Thank you for the recipe!!

Best Peanut Butter Cookies Ever

Reviewed: May 15, 2007
These were good - I'm sitting here eating them right now while my family is sleeping!! Very easy to make. I used half brown sugar and half white as other reviewers did, and I used natural peanut butter. I think I still like the Eggless Peanut Butter Cookie recipe on this site the best, though. Thank you for the interseting and easy to make recipe!!

Slow-Cooker Pepper Steak

Reviewed: May 11, 2007
My husband and I really enjoyed this dish. My five year old ate the beef but my 12 year old didn't like the taste. I used a yellow, red and orange pepper. The last hour I turned the crock pot on high to really make the meat fall apart tender. I also added some extra corn starch at that time to thicken up the sauce. I will make this again and my son can have a hot dog!! Thank you for the recipe!!

Chicken Enchiladas V

Reviewed: Apr. 25, 2007
We all really enjoyed this enchilada recipe. I did add two cloves garlic and sauteed with the onion. I cut back a bit on the chopped onion. Used lo-fat cream of chicken soup, lo-fat sour cream and lo-fat mexican cheese blend. I would add an extra 1/2 can of soup and a bit more sour cream (with extra seasoning) to make it a bit more creamy. Thank you for the recipe!!

To Die For Blueberry Muffins

Reviewed: Apr. 20, 2007
The name definitely fits - my husband said they were gourmet bakery quality. The only change I made was the oven temp. 400 seemed way too high for my oven. I baked at 350 until nicely browned around the sides but not brown on the top. They were perfect and not too done or dry. The topping was yummy - use all of it!!

Fudgy Chocolate Chip Muffins

Reviewed: Apr. 19, 2007
Yum, yum, yum - all the neighborhood kids loved. I substituted melted butter for the margarine, and since I didn't have chocoate chips I added aboout 4 oz melted bittersweet chocolate. I baked at 340 degrees. They were slightly dry so next time will add a bit more liquid. Thx for the recipe and helpful hints!

Poppy Seed Bread III

Reviewed: Apr. 19, 2007
This was a delicious quick bread and I even forgot to put the gaze on at the end. Next time I will add the glaze but it was still delicious without it. Also, I didn't have any butter favoring but it still was great. I also substituted 1/2 applesauce for the oil. 400 degrees is too high for my oven so I baked at 350 until they were lightly browned and the top was firm to the touch. I baked in six mini loaves. Thank you for the recipe!!

Unbelievable Spinach Calzones

Reviewed: Apr. 11, 2007
I'll give this five stars because my children (ages 5 and 12) both thought they were "yummy" and ate a whole calzone dipped in sauce. That's a green vegy and a red vegy!! As a mom I'm thrilled to get them to eat vegetagles without complaint. I made my own pizza dough in the bread machine, so I had my oven temp on at 375 (400 sounded too high for my oven and I thought the dough would burn). They turned out great. I'll add a bit of fresh garlic next time, too. Does anyone know if these freeze well either prepared but not baked or after they have been baked? Thank you for the recipe!!

Albondigas Soup I

Reviewed: Apr. 1, 2007
My husband loved this soup but I did tweak it. I looked at Albondigas Soup II on this sight, and added spices called for in that recipe: tsp each of cumin and chili powder and garlic powder in the broth. I also added chopped 5 carrots, 2 large zucchini, 5 celerystalks and some chopped onion(I made some extra brotht o accomodate the vegies). I think the addition of the vegetables made it a much better soup.

Caesar Salad Supreme

Reviewed: Apr. 1, 2007
I was looking for a ceasar sald dressing withouot raw eggs, and this fit the bill. I added a bit extra parmesan cheese, and since I didn't have anchovies omitted them. Will use this again but still going to try looking at other recipes. Thank you for the recipe - certainly was easy to make!

Irish Soda Bread

Reviewed: Mar. 17, 2007
Wow - we all loved this recipe. I found it very easy to make. I used almost 1/2 whole wheat to replace part of the white flour for a heartier bread and used about 2 1/2 cups golden and regular raisins. This bread is a great holiday tradition. Thank you for the recipe!! Note: I made this again this year (03/17/08) and enjoy the bread a lot but will cut back on the raisins next time. I used 2 1/2 cups mix of golden and regular raisins. I think 2 cupos would be plenty!

Irish Beef Stew

Reviewed: Mar. 16, 2007
I followed this recipe as is, with the exception of adding some parsley as I saw in other Iris Stew Recipes. The londer it cooks in the crokpot the more tender the beef and vegetabes (at least 10 hours). I served at a party. Everyone really enjoyed. It is better the next day! I added salt to mine as I think it needed a little flavor boost. I would make again for the holiday. It does taste a little different than a traditional American beef stew. oh - I did use Guinness Beer - it is Irish Stew after all!!

Strawberry Bread

Reviewed: Mar. 9, 2007
I thought this was delicious and will add to my recipe box!! I did make the following changes to make it 5 stars and a little healthier: I doubled the amount of starwberries; used 1/2 whole wheat floue and 1/2 white; used 1/2 the amount of oil called for and substituted applesauce for the rest. Also, i split up the batter and added 1 cup pecans to one loaf and 1 cup chocolate chips to the other. Thank you for the yummy recipe!! Oh - I used fresh strawberries!!

Garden Tomato Salsa

This is a very good mild salsa. I used farm stand roma tomatoes, 1/2 fresh jalepeno pepper diced small and extra cilantro. My family could eat the whole bowl in one sitting if I let them!!
