Spinach Stuffed Chicken Breasts

Reviewed: Oct. 8, 2008
Really enjoyed. I didn't have enough feta, so added some shredded Italian cheese mix. Also, drizzled a bit of olive oil, salt, pepper & oregano over chicken breasts. Be sure not to overcook!! Will make again - easy to modify any way you like. will try some of the other suggestions.

No-Peek Beef Stew

Reviewed: Aug. 24, 2008
Very easy to make. I added two small diced potatoes, 2 carrots and 2 celery sticks (make sure you leave in the crock pot long enough for the vegetables to thoroughly cook 9-11 hours on low or so). I also added about 3/4 cup red wine instead if 1/2 cup, and some onion soup mix. Will be making again! Thank you for the recipe.

Lentil Soup

Reviewed: Aug. 12, 2008
I thought this was easy to prepare, healthy and yummy! I was so proud of myself for using homemade chicken stock that I had in the freezer from preparing whole chickens for other recipes on this site. I think homemade stock tastes much better than the canned stuff! Plus I saved the cost of buying the canned stuff. Anyway, the soup was very good. You can spice it up if you need more flavor, too.

Hamburger Cheese Bake

Reviewed: Jun. 27, 2008
I tinkered with the portions a bit. I used a jar of spaghetti sauce and some extra tomatoe sauce. I also used 1/2 ground beef and 1/2 vegy ground round substitute. I didn't use quite as much pasta. I also added a bit of light shredded italian cheese mix. So with all those changes, everyone in my family loved it! This is an easy recipe to "make your own." Thank you.

Yummy Honey Chicken Kabobs

Reviewed: Jun. 12, 2008
Everyone loved these!! I was too lazy to skewer so I put the chicken in one pan and all the vegies in another and cooked that way. Worked out fine. I used tri-color bell peppers and lots of onion. Will add to my recipe box. Thank you for the recipe.

Slow-Cooked Steak Fajitas

I only had round steak in the house, so I used that. I forget how long I cooked it overall, but just kept it on until the meat was tender. Thank you for the recipe!

Cherry Pie III

Reviewed: May 23, 2008
I made the crust using a different recipe which calls for 2 2/3 cup flour, 1 cup shortening , 1 tsp salt and 7 -8 tblsps. ice cold water. I didn't think 2 cups was enough cherries, so I added 4 cups ( I used fresh - a bit of extra work but I think worth the effort). I think it's a delicious pie!!

Very good pie recipe. I did add an extra tsp. cornstarch. I did not have a problem with the filling being runny. My family and friends gobbled down and I made two pies!!

Oatmeal Butterscotch Cookies

Reviewed: May 7, 2008
Very easy to make. It's the traditional butterscotch oatmeal cookie recipe - can't go wrong with these cookies! I always bake my cookies at about 365 degrees instead of 375 - I find that temp. too high. Thanks for the recipe!

Banana Banana Bread

Reviewed: May 3, 2008
This banana bread was very easy to make. I did use the full amount of bananas 2 1/3 c. which turned out to be about 4 1/2 bananas. I also used half whole wheat, half white flour. I cut back on the butter by almost half and added some plain yogurt and sour cream to make up the difference. I then added 1 tsp. pumpkin pie mix (I was out of cinnamon) and 1 cup chopped walnuts. Sounds like a lot of tweaks, but that is the beauty of this type of recipe. Easy to make and modify.

Ham Bone Soup

Reviewed: Mar. 28, 2008
I never used a left -over ham bone before, so I was very proud of myself for making full use of our Easter ham. I didn't have green pepper, but added celery, carrots, garlic and 2 bay leaves per other reviewers suggestions. I also used canned chicken broth, because that is what I had on hand. I think the soup was a little too salty - will use lo-sodium chicken brothe next time or my own home made stock. Otherwise, a good soup. Thank you for the recipe.

It's Chili by George!!

Reviewed: Mar. 25, 2008
Really enjoyed this easy chili! I did half the amount of tomato juice called for, as I read other comments about the chili being a bit too soupy. I also added a whole chopped green pepper. I thought the consistency and flavor were very good. Made it yesterday in the crock pot. After my son had friends over there is only one small serving left today! will add to my recipe box. Thank you, George.
