This is a great recipe! I made a few changes, which is why I'm only giving it four stars. First, I only use 3-4 TBSP of olive oil, six makes the sauce a little too oily. I also add red pepper flakes to make the sauce a little spicier (I don't measure this, I just throw them in) and around 1 TSP of sugar to cut the acidity of the tomatoes. As for the wine, I throw in 1/2 cup of whatever I have open; I've found that my favorite to use is Cabernet Sauvignon (but maybe because that's my favorite to drink). This can also turn into a fabulous bolognese simply by adding 1 lb of browned ground beef and doubling the recipe. This is truly a great sauce that I make at least twice a month.
