Very, very nice texture. I added chopped pecans. And as someone else noted, better the next day. I don't know about the third day because I don't think any of them are likely to make it to the third day:)

Snortin' Good Salad

My favorite salad from this site. Great to take to potlucks or when having a group over to the house. also good the next day... none ever goes to waste. I use romaine lettuce and usually add in some grated cheese and double bacon. Even Mr. Meat-n-tatters loves it.

Fruit Pizza II

I use the orange glaze part of this recipe for all kinds of things. Just fantastic when making anything with fresh fruits. Adjust cornstarch to adjust thickness of glaze.

Better Than Pumpkin Pie

Love it.. the best "pumpkin' pie I ever ate. I did up the spices, 2x cinnamon, a few good shakes of ginger, a few shakes of apple pie spice just WHAT I HAD ON HAND and the recipe needs to be tripled to give 2 nice size pies. Also, I used a potato peeler to peel the whole squash. Made that part really easy. I already polished off my last piece. Thank goodness I sent the other one home with my mother or I would sticking a knife in it right now.....

Alaska Salmon Bake with Pecan Crunch Coating

As I was putting on the bread crumbs, it looked like it was going to be just to much so I used only about half the topping. It was delish!!! And quick. And easy!!! Mr. Picky had wanted to grill the salmon the way we usually do but it was just to cold outside so I talked him into trying it this way for a change. Mr. Picky loved it!!!

Enchilada Sauce

Grew up here in texas and used to the tomato sauce type but this is a very nice alternative, similar to mole' sauce. The recipe does need more oil to make the roux and I had to simmer it a very long time to get it to thicken up. I'll definitely make it again but add more flour. I went very lite on the cinnamon and heavy on the chile powder, personal taste. Great with the cottage cheese chicken enchilada on this site and you can use the left over broth from stewing the chicken breasts to make this sauce, save a couple bucks.

Chicken Florentine Casserole

Fast, easy and tasty. I used frozen spinach, 2 huge chicken breasts each split in half just pan fry in a little evo, canned mushrooms, cream of chicken/mushroom soup, 2 nice thick slices of good smokey bacon and only half the cheese on top and it came out great. Served w/ thin pasta on side to pick up the sauce. Even Mr. Picky liked it.

Chocolate Cookie Cheesecake

Great recipe, first time I made it, it went so fast I didn't even get to taste it!! So I had to make it again...makes a beautiful presentation too. Don't be scared off by the several step prep...it's easy, just follow the steps...even for a beginner. I also left out the cinnimon, thought it would be a little overkill....This ones a winner TRY IT.
