Banana Oatmeal Cookies II

I thought this was a great recipe, and a good alternative to banana bread. Also was very forgiving, in that I was a little short on a couple things. I left out the cloves, doubled cinnamon. Used 1/2 butter instead of all shortening & added pecans instead of walnuts. I would definitely make these again.

Boilermaker Tailgate Chili

I just made this yesterday for a chili cookoff we held at work. Out of 10 entries I won 1st! I made it pretty much as the recipe said, but I did use about 1/2 lb of bacon and cooked it with the rest of the meat. I also couldn't find the spicy chili beans so I used a different kind of flavored bean, and I used light kidney beans. I let it simmer for about 5 hours, then reheated in a crockpot. Very good - not too spicy.

Chocolate Pecan Pie III

The Old Boy's Strawberry Pie

This was delish. My hubby said this was the best dessert he'd ever had in his life. Not the prettiest thing in the world, and it's hard to keep leftovers (gets kinda soggy) but soooo good.

Awesome Baked Sea Scallops

I didn't care for this at all. I love scallops, and had them fresh from Alaska. The breading was mushy after baking. I guess it tasted ok, but I won't use this recipe again.

Ma's Premium Ice Cream Pie

This is the best! I can't do double chocolate, so I've used peanut butter ice cream as well as coffee ice cream instead. This recipe is soooo easy as well - can't go wrong w/ this one.

Apple Crisp III

This was very good! I added frozen blueberries to the apples and grated fresh lemon zest into the dry ingredients/topping. I made a huge pan, and it was gone right away!

Slow Cooker Stuffing

I make my stuffing this way every year now. I would recommend doing a "test run" prior to see how it turns out so you can adjust ingredients. I've added cooked sausage to the mix as well & it was good. It's a real time & space saver to do it in the crockpot, plus it travels well.

Fast Chicken Divan

This is awesome! I made with a rotisserie chicken I bought. I cooked 5 or 6 pieces of bacon and crumbled over the chix. I used 1 can of fat free cream of chix soup, 1 can fat free cream of mush soup, lite mayo, and 1/2 of a fresh squeezed lemon. I also sauteed a container of fresh sliced mushrooms & 1/2 an onion and added on top of the broccoli. Instead of the bread crumbs I used crushed corn flakes mixed with melted "I can't believe it's not butter lite". Added cracked black pepper & sea salt for seasoning.

This is good - my family says it's better than lasagna. I use whatever cheese I have on hand & use extra! I also add a can of sliced black olives and a can of sliced mushrooms.

Cottage Cheese Chicken Enchiladas

I used a rotisserie chicken for the meat, and also used an extra can of enchilada sauce. It doesn't matter if your tortillas (I used corn) don't stay in place or rip because when it's all done baking it's more like a casserole anyhow. Cut in squares when cooled & serve. I've made this two or three times now & it will be my staple chix enchilada recipe.
