Best Burritos

AWFUL! Am I the only one that thinks American Cheese isn't a real cheese? Especially not one that is used in mexican dishes. Once I took the cheese out of it and added onion, bell pepper, cumin, corriander, chili powder, garlic, black olives, black beans, chopped tomato and some avacado I had my standard burrito which my 6 year old said was WAY better...betterer a million T-rexes big than this one.

Kielbasa Kale Stew

As far as Kale soup goes this is definitely 4 stars. I did make a few changes. I chose to puree the potatoes in a blender with their broth after I mashed them until smooth. I used chicken broth instead of water. Also we added one bunch of scallions chopped, 3/4 cup of very thinly sliced carrots blanched until half done, 3 cloves of garlic crushed, and 1 tsp rosemary. All of this we added to the soup when we added the sausage and kale. My family hates kale no matter how I cook it and even they said this was okay. I got my 7 year old to try half a bowl and she never eats anything but peanut butter or rice.

Mushroom-Stuffed Chicken Breasts in a Balsamic Pan Sauce

The reason the previous reviewers chicken burned is probably because she altered the ingredients without altering the cooking. Chicken thighs are a lot smaller and need to be cooked on lower heat. (BTW-The recipe DOES state to remove the bone). I made this almost as is except for the addition of re-constituted chopped sun-dried tomatoes that I happened to have on hand to the stuffing mixture. I also did not use dried mushrooms and as a consequence substituted veggie stock for the reserved mushroom stock in the recipe. Perfect recipe. Even my 7 year old loved it.

Hot Fudge Pudding Cake III

We also have this recipe, I got this from my grandmothers depression era favorites. (She does have a note in the margins to add 1-2 Tbsp of instant coffee crystals to boost the flavor for when she only had half the sugar ration left that the recipe called for.) Definitely more of a cake with hot chocolate sauce on the bottom than the texture of a traditional English pudding cake.

Lemon Pudding Cake II

The only way the pudding could be bland tasting is if you use bottled lemon juice. I used fresh squeezed lemon juice and also used cream not milk. (Once in awhile you just have to give flavor to a recipe over skimping on fat.) This recipe was not the best lemon pudding recipe I've had but it was darn good.

Skillet Balsamic Chicken

Balsamic vinegar is rarely more than 1/4 cup for a LARGE recipe b/c of it's pungent flavor. Some common sense adaptations on the part of this long-time cook were to add 1/4 balasamic vinegar and 1/2 cup red wine (a good flavored shiraz was what I used) instead of the measurements of red wine vinegar and balsamic vinegar given in the recipe. Also 2 Tbsp. oregano will give an overpoweringly strong oregano flavor. Substituting fresh basil and omitting the oregano altogether was also another no-brainer substitution. We also added some reconstituted sun-dried tomatoes (1/4 cup dry or 1/2 cup reconstituted) chopped and some sliced mushrooms (we used portabella's due to their mild flavor and ability to hold up to high heat & long cook times). After making those changes this recipe was fantastic! A lot of the previous reviews claim too strong a vinegar flavor which makes sense when you take the strongest flavored vinegar on the planet, add too much and then cook it down to make it even MORE so.
