Easy Spinach Artichoke Dip

Reviewed: Mar. 18, 2011
As is I only give this a 3 because I don't prefer the mayonnaise taste. I modified the 2nd time we made it and used a box of cream cheese and about 3/4 cup heavy cream instead of the Alfredo Sauce.

Chewy Cocoa Brownies

Reviewed: Mar. 18, 2011
Great base recipe, followed it exactly the first time a made them. The second time I added walnuts and the crunchy texture was very nice. I think next time I will follow other reviewers and add some kind of chips or caramel on top. The 3/4 cup of cocoa is nice, any more and I think they would be un-edible. Thanks for a great brownie recipe!

Fruity Fun Skewers

Reviewed: Mar. 18, 2011
I have been making various versions of this for several years....made them for my daughter's 16th birthday and when I brought them out the kids swarmed the table and had them all gone in a very short time. For our tastes we use watermelon instead of cantaloupe. Always a hit on buffets too.

Emily's Famous Banana Oat Muffins

Reviewed: Oct. 14, 2009
After reading other reviews I substituted vanilla yogurt and a touch of olive oil at the end instead of the vegetable oil, also added honey and walnuts to taste. I topped these with lowfat carmel apple dip after baking instead of traditional icing to entice my teenager and she loved them! Thanks for the recipe.

Blueberry Drop Cookies

Reviewed: Sep. 8, 2009
After reading other reviews I made several alterations to this so I could use up the leftover blueberries we had on hand. I used less milk (a splash or 2 at most), vanilla extract instead of almond flavoring, added walnuts and chocolate chips and used an 8" x 11.5" x 2" glass baking pan. I also froze the batter for an hour before baking and sprinkled with powdered sugar and cinnamon when removed from the oven. Turned out great as a substitute for muffins/cookies. Would make again but the title should be changed from cookies to muffins as the texture is not like any chocolate chip cookie I've had. Thanks for the base recipe.

Pork Chops with Apples, Onions, and Sweet Potatoes

Reviewed: Aug. 3, 2009
Like others after reading the reviews I decided to do this in the slow cooker. I added celery and red onion and about 1/3 cup of apple juice to remove the pan drippings after browing the chops. I also added the apples on top of all other ingredients after they had been in an hour, this helped keep them from becoming to mushy...My husband raved about this and he is usually pesimistic about new recipes. Thanks for a good recipe.

Mini Meatloaves

Reviewed: Feb. 22, 2008
I made some alterations to this but liked the idea of using the oatmeal instead of crackers/breadcrumbs. In addition to the oats I also put red pepper, celery, carrots, red onion and garlic in the food processor and ommitted the egg. This was still very moist. For the glaze I used ketchup, worcestshire and brown sugar with a few scallions. My favorite meatloaf ever even my 13 year old who is a "sometimes" vegetarion loved this version. Thanks for the oatmeal idea!

Crookneck Squash and Tomatoes

Reviewed: Aug. 7, 2006
I tried this one out on a group of friends as a side to our Steak's on the grill, I added mushrooms and some zuccini we had lying around. I think the mushrooms gave it too much liquid -- next time I think we'll just through them on the grill instead. Thanks for the recipe. I love trying new ways to make veggies.
