Mexican Rice III

We went crazy for this, I substituted ground chipolte chile pepper for the cumin (husband thinks he dislikes). A very welcome break from Spanish rice or yellow rice! Thank you.

Cantina Pinto Beans

I was lazy and used a can of pinto beans for just my husband and myself, but added all the veggies and spices (scaled back of course). I substituted ground chipolte chile pepper for the cumin, results were excellent. These went great with the Sour Cream Chicken Enchiladas from this site.

Sour Cream Chicken Enchiladas

My husband grimaces at the mention of Tex-Mex and is not a fan of Mexican cuisine--go figure! He's still raving about how good these were, just about turned his life around! I couldn't find green chile salsa so just added chopped green chiles to some regular. Also used Monterey Jack/cheddar on top. Otherwise, I followed the recipe exactly, and this will be a regular in our house.

Quick and Easy Thai Style Coleslaw

We really liked this, I'm surprised at some of the bad reviews. However, I made it at the last minute, and didn't have any fish sauce, so just skipped that part. I'll definitely make this again!

Indonesian Spiced Rice

Boy did we love this, served with the Indonesian Chicken Satay from this site. I was nervous that my husband wouldn't like the heat from the jalapenos,but he was crazy about it, and he's not even much of a rice fan. Thank you!

Indonesian Satay

We absolutely loved this, cooked on the charcoal grill--outstanding. This satay is a hundred times better than what we've had at a local French-Vietnamese restaurant. I served with the Indonesian Spiced Rice and Asian slaw (both on this site). What a great meal!

Cowboy Caviar

My husband and guests laughed at the name of this appetizer- but LOVED it! I left out the corn and bell peppers, used fresh jalapenos (chopped and seeded) as well as fresh garlic, and added two tablespoons of cider vinegar. Didn't have fresh cilantro, though, but used about a tablespoon of dried. This made a lot, but mixed up with rice as a side dish the next day was fantastic!

Suki's Spinach and Feta Pasta

This was just perfect for a Saturday afternoon late lunch for two with a bottle of Chardonnay! I managed to scrounge around the house and find most of the ingredients, and had to use a few substitutions. I only had frozen spinach and jarred diced tomatoes (Those DelMonte sliced or diced tomatoes in jars are wonderful). I didn't have any feta cheese, but I had read a similar recipe that used blue cheese, which I served on the side as an optional topping. I also had slivered roasted almonds and sliced kalamata olives(as recommended by others)on the side for toppings. Thank you Suki!

Classic Macaroni Salad

I feel pretty silly reviewing this recipe with all the changes/additions that I made. This is what I did: basically 1/2 mayo & 1/2 sour cream, 1/2 yellow mustard & 1/2 dijon; green onion instead of regular; added sliced green olives and shredded cheddar (small amount). Did not use bell pepper (husband's preference). I also reduced the amount of sugar by about 1/3. For what it's worth, everything else was the same. Nevertheless, we just loved it, my husband is hogging the leftovers!

Irish Soda Bread

Every year I make soda bread, using one recipe or another--but this one was raved about! I did leave out the raisins (I don't like) and the caraway seed (husband dislikes), but who cared? And when Ellen says the dough is sticky, she ain't kiddin', it made me think I had really messed up somehow. But that certainly was NOT the case, this is the best!

Corned Beef and Cabbage II

Excellent! We've always done our St. Patty's Day regular old corned beef/cabbage/potatoes, and it was always good--but this just about pushed us over the edge. I used one can of beef broth and added some beef bouillon granules to the remaining water. Followed the recipe and also added the spice packet, cooked in a cast iron dutch oven on the stove top. The recipe didn't indicate if it should be covered, but I did throughout most of the simmer time. I saved the cooking liquid because my husband wants a repeat today instead of corned beef sandwiches! Thanks so much for posting.

Sour Cream and Chive Mashed Potatoes

These have really become a household favorite. It's similar to a recipe I've used before with sliced green olives. I used scallions, light sour cream, and yukon gold potatoes. Seemed funny not to use butter, but it was not missed. Thanks for sharing!

Inside Out Ravioli I

I was a little skeptical of this one, at first it sounded like a "clean out the fridge" dinner,but we were amazed at how great this came out. I think the spinach and breadcrumbs really made it more special. I didn't have any mozzarella, but I did have parmesan, romano, some ricotta and Italian blend that I used instead (talk about cleaning out the fridge!) Leftovers were great, too. Thanks!

Amazing Greek Pasta

This was truly amazing, we loved it. We cooked cubed chicken breast along with the garlic and onion, stirred penne pasta into the skillet. The blend of tomatoes, capers and olives drove us out of our minds. We'll be making this again...and again...
