Trail Mix Sandwiches

I skip the lemon zest and use whole wheat bagels - and this recipes is great. While nothing you would find in a restuarant, we always take this camping or hiking with us. It is a great change from traditional sandwiches. I use trail mix with fruit. When we go camping I make the mix, store it in tupperware and keep it in the icebox until the day we are going to use it. Then I just spread it on the bagels. When we go hiking I wrap it good in saran wrap and foil. This sandwich doesn't get squished either in between the rest of our hiking stuff - so it is great for that reason too! Definitely give it a try!

Dirt Cake I

Two comments: First, this is a good recipe, but I gave this 4 stars because I only needed half the amount of oreo cookies the recipe calls for. Second comment (none of this affected my rating): I followed the recipe using chocolate, vanilla, and cookies and cream pudding flavors. Then I made the dirt cake with straight pudding (following the directions on the box) and the oreo crumbs. I had my husband do a blind taste test, and with all three of the cake "flavors" he liked the simple pudding version better than the elaborate cake version. So, I made dirt cups for my daughter's party with just pudding and oreos and it was a hit! Saved me some money too. So, while this is a good recipe, you might be able to save some time and money just using regular pudding. Oh, for the layers (in little plastic cups) I used 1/3 c. of oreo crumbs (splitting it three ways) with 1/3 c. of the pudding inbetween each of the oreo layers.

Baby Blue Punch

Followed the recipe exactly and it was great! Made it for a boy baby shower, and several people at that shower have called me for the recipe to use at a boy baby shower they were throwing. Thanks for the fabulous blue punch!

Slow Cooker Bean Casserole AKA Sweet Chili

My husband really liked this and even my 2 year old ate most of hers. I followed other's suggestions (mainly because those are the things I had on hand) and decreased the ground beef to 1 lb., used maple syrup in place of molasses, added 1/4 c. extra ketchup, used onion instead of bell pepper and doubled the baked beans. I also added some hotdog - which was great for the texture. Try it! :)

White Chocolate Lace Cups

These take a little work but are excellent! I made them for my husband and I on a "date night" and we both loved them. I love chocolate sweet stuff and he is not a sweet eater. This dessert, however, pleased both of us and was a perfect after-dinner, light tasting dessert. I will definitely be making this again. It is in my permanent file!

One Pot Pasta

4 Stars because the concept is so simple. Three for taste with the recipe as is. I had to double the spices, because the first time I thought it was too blah (but I like LOTS of flavor). Next time I will also top with cheese and then it will definitely go in our rotation.
