Chicken with Peanut Curry Yogurt Sauce

this is a great dinner! The peanut sauce is almost addicting. I really like to put carrots in mine i think it goes good with the sauce. I also never seem to have bell peppers, and substitute it for cabbage which I think tastes great. I do add about a Tablespoon of sugar, it just seems like it needs a little sweet.

Turkey Veggie Meatloaf Cups

This a super tasty, easy recipe. I tried to do the veggies in a blender (i don't have a food processor) but it didn't work very well. I ended up chopping them up pretty fine, which was more time consuming but worked just as good. I also didn't have any barbecue sause or Worcestershire sauce so I topped them with ketchup only. I used the big muffin cups (6 in a pan) and let them cook quite a bit longer, around 50 mins. Yum Yum!!

Almond Wild Rice

We love this recipe at my house. It goes perfectly with salmon and is great for leftovers. The only reason I didn't give it 5 stars is I think the recipe as is has too much butter, you can cut it by at least 2 TBS. The chicken broth is optional, I just use water. I also add mushrooms and saute with the almonds.

Gel's Green Beans and Beef

This was a super easy, super fast DELICIOUS dinner. My hubby ate it up and I loved the sweet tangy sauce. It would also be good using chunks of chicken rather than the beef. I served it with rice and added mushrooms.

Chewy Coconut Cookies

Artichoke Spinach Lasagna

Butter Flaky Pie Crust

This is my go-to pie crust recipe. I use it for pot pies, quiches and dessert pies. I usually add 1/2 c. whole wheat flour and then 3/4 c. white flour. I always combine the ingredients in a food processor and add the ICE water slowly until it forms a clump. Add a few more drops of water if using the wheat flour. Thanks for the fab piecrust recipe!

Cranberry Upside-Down Coffee Cake

This is a stand out recipe. Like many other raters have mentioned, the presentation alone is worth the 4 stars. I make this cake often and make it just as the recipe says. It's hard not to eat all the carmel before you get it in the spring form pan. :D Enjoy!

Caramel Shortbread Squares

Wow! What a yummy, rich dessert. The carmel itself is worth making for ice cream or anything else. I used a 9x7.5" glass dish. I had no trouble with the temperature of the crust making the carmel run, I put the carmel on about 10 mins after taking it out of the oven. When I make these again I think I will cook the shortbread just a little bit longer and maybe use less chocolate, just to cut down on the sweetness. The only problem I had was eating it before it set up, but that's my own fault!!! It tastes just like a Twix as one reader said.

Broccoli Chicken Casserole IV

This is a great recipe and has become a standard at my house. I do use fresh broccoli, add mushrooms and frozen peas, omit basil and cover while it cooks. Then I boil some wide whole wheat egg noodles and mix it all together. YUM. :) THX for the recipe

Mini Cheesecakes

This has become a standard recipe at my house. I know if my husband gets a sweet tooth, these little guys are done quickly and perfectly each time. You can put whatever you want on the top, which makes it seem like a different dessert each time. I have taken this them to dinner parties, work and given away to neighbors and every single time I am asked for the recipe. I usually make them in a standard sized muffin pan with liners and just watch the time...usually five more minutes is all you need. Love this one!

Mouth-Watering Stuffed Mushrooms

This is a great recipe and actually much easier than in first appears. I do add a can of crabmeat to the mixture. My husband gobbles these up as fast as I make them. They are even good the next day after you reheat them. Thanks for the recipe!!

Pumpkin Cheesecake Bars

My boyfriend absolutely loved this recipe and he knows his cheescake! I did use an individual mini cheesecake recipe and made a cheesecake layer. The poundcake crust was awesome. If you do make a cheesecake layer, make sure you put it undder the pumpkin layer because otherwise it will not layer, and increase your cooking time by about 10-15 minutes. Thanks for the great recipe, I will use it often!
