Super BLT

Reviewed: May 5, 2012
Made the Recipe for a picnic style event. Got so many compliments. As I didn't have much time to make the sandwiches on the day of the event, I baked the bacon the day before. I also made homemade guacamole the day before - laying a piece of plastic wrap directly on guacamole itself (to keep it from browning) before storing in the fridge. Assembly the next day took only minutes. Sandwiches traveled well. Definitely worth making again. If you have the time, I definitely reccomend using homemade gaucamole.

'Chinese Buffet' Green Beans

Reviewed: Mar. 26, 2012
Really Easy. Family really liked. Did have to be really careful with the garlic so that it didn't burn -- I added about 2 tablespoons water to the beans after about 2 minutes of stirfrying to speed up cooking without burning the garlic

Dutch Apple Pie with Oatmeal Streusel

Reviewed: Mar. 26, 2012
Very good, solid recipe. Family liked a lot, even my husband who doesn't like desserts very much. I used Granny Smith apples and the pie was neither too sweet or runny. Also, the pie sat for about an hour before we cut into it, which helps the pie firm up and not be runny. I didn't freeze my crust. I used it straight from the fridge and the crust was fine, both around the edges and in the middle.

Three Packet Slow Cooker Roast

Really easy and the kids loved it. Chuck can be a bit fatty, so I strained the grease out of the "sauce" after cooking and before serving

Smoked Turkey And Sun-Dried Tomato Wraps

Reviewed: Aug. 14, 2010
Easy too make and fresh and tasty. I've made these on several occasions when I had to prepare something ahead of time that will be served outdoors. I can never find the pesto with sundried tomatoes, so I just add diced sundried tomatoes packed in oil (drained) to the pesto. I also use spinach tortillas to add more color and flavor.

Ground Beef Enchiladas

Family really liked it. I did use regular sour cream and not the plain yogurt. Do heat the tortillas before filling or they will tear when you try to roll them

My Teenage daugther loves to make this fudge and likes the texture. I personally agree with many of the reviewers and think its a bit too soft.

Raw Veggie Picnic Salad

Reviewed: Mar. 14, 2010
Really good. Really Easy. I increased the recipe to serve a crowd of 50 and still turned out great. Watch the salt though. Depending on the brand/style of the bacon you use, this dish can get a little too salty. I reccomend adding the cooked and crumbled bacon to the "wet" part of the recipe, tasting the mayo mixture and then add the salt to your taste to this part of the dish before combining with other ingredients.

Mexican Bean and Rice Salad

Reviewed: Mar. 14, 2010
Made this for a huge crowd (scaled recipe up to feed 50) and was really easy to assembly even at that size. I gave it 4 out of 5 stars because I did change the recipe a little. First, I found the Jalapenos added a nice brightness to the dish but not really any noticable heat, so I served the dish along side a bottle of our favorite hot sauce, letting the guests add heat if they wanted. Also, I added advocado (as another user suggested) and added more fresh lime juice -tossing the avocados in some of the lime juice to keep them from browning. When served the recipe got rave reviews and I sent the recipe home with a bunch of people.

Cinnamon Ice Cream

Very Easy and no Fail. Very creamy. Strong, but not overpowering taste. Some Ice creams with eggs I can taste the egg in the final product. I did not have that problem with this recipe. Great with an Apple Crisp or an Apple Dump Cake

Fantastic. I, like others have used jalapenos in place of the habanero, and/or used one of each when doubling recipes.
