Quick and Easy Pizza Crust

This is a great recipe and can be modified. Sub honey for sugar in same amounts, sub some whole wheat for bread flour. I do knead it a bit and recommend letting it rest an hour or more. It holds up great if you freeze it too.

Asian Lettuce Wraps

The sauce was perfectly balanced. A bit sweet and earthy but not too sharp or salty, and perfected by the acid from the lime. I made this with gardein beef chunks to make it vegetarian. Subbed in fresh ginger. Will make again.

Really good but I sub butter for the veggie oil as others have mentioned. Fabulous on biscuits. Make this right before serving so it isn't a gloppy mess.

Creamy Succotash with Bacon, Thyme and Chives

This is so good. I make it vegetarian with Morningstar veggie bacon on top. I like to add salt and pepper and just use veggie boullion and water to cook the veggies. Delicious.

English Tea Cucumber Sandwiches

I altered a bit but this was a great starting recipe. I mixed worcestershire, fresh lemon juice, garlic salt, black pepper, and cream cheese for the spread. Added fresh mint on each cucumber slice for a light fresh taste.

Really great. My italian husband loved it and ate leftovers two days in a row, which he never does. Instead of chicken broth I did some diced tomato and veg bouillon. Added clam juice for depth of flavor and simmered all afternoon before adding seafood.

Jamie's Cranberry Spinach Salad

I will surely make this again but keep the changes I made. I toasted almond slivers and pine nuts. Added strawberries and a can of mandarin oranges. To the dressing, I added salt and pepper and substituted honey for sugar and EVOO for veg oil. We enjoyed this itself for supper and were quite satisfied.

Roasted Brussels Sprouts

This would get five stars with my modifications. I added fresh minced garlic and chopped onions. Then when they were starting to get tender I added crushed red pepper flakes, italian bread crumbs, dried parmesan cheese, and fresh lemon juice. The lemon juice put it over the top.

Southern Pimento Cheese

People from the south came over and ate this, and took the leftovers home. The only thing I might change next time is to add more cayenne and jalapeno because I like it hot. When I ate it, I put on some sriracha (a red vietnamese hot sauce) and it was marvelous on hawaiian rolls.

MMMMM... Brownies

Best brownies ever. So fudgy, so soft and chewy, but such great crisp edges. I doubled the recipe and cooked in a 9 x 13 pan. They were perfectly done in 25 mins. I subbed in dark chocolate chips and will do it that way every time.

Fruity Curry Chicken Salad

I made this vegetarian. You heard me right. Just tasted it fresh made and rating it a five, can't wait to serve it tomorrow. I used Naked Cutlets of vegetarian chicken substitute that I cut in small cubes and seared in the pan. I at least doubled the curry powder because I love kick, and subbed cranberries because I hate raisins. This is a perfect balance of color, texture, and flavors in harmonious contrast.

Meatball Nirvana

We used veggie "meat" to make meatballs for a sandwich. These were fantastic. Just the right amount of flavor and kick and very simple to put together with common ingredients. We will use this all the time.

Authentic Pad Thai

We subbed Hoisin since I couldn't find Tamarind. Everything else was followed to recipe. Came out very delicious and authentic except the noodles were lighter than expected instead of the medium brown at restaurants.

Chicken Pot Pie IX

Fabulous recipe but need to at least double the gravy and filling so it isn't too dry. I used the Basic Flaky pie crust recipe and it was perfectly matched. Baked in a deeper Corningware pan. I prefer a bit more s and p for seasoning. Made this vegetarian with veg broth and veggie chicken.

Already repeated this one. Great simple recipe. Flakiest crust ever. I have subbed part butter for some of the shortening to add a bit of flavor as well. Stands up to alterations and is very easy to handle and roll out.

Fish Tacos

This is a regular meal for us now. The batter makes the perfect fish for tacos (we typically do tilapia). The sauce is excellent, though it improves with time so try to make it a few hours early if not the day before to allow the flavors to come together. Do be sure to include the jalapeno and capers for bite. I use mostly sour cream with a dot of mayo instead of yogurt, since I like the additional tang and it works well with tacos. Serve with pico de gallo or salsa and fresh cilantro.
