Forgotten Cookies II

I love this recipe and have been using it for years. I'm a chocoholic, so I always omit the nuts and add an additional 3/4 cups of chocolate chips! I use milk chocolate, though, because I like the taste of milk chocolate better than semi-sweet. As always, use quality chocolate when making a recipe like this because it really comes through.

Baked Ziti IV

My family really enjoyed this dish. I loved the fresh rosemary. It's simple and very good. I used the 8 oz. packages instead of the 6 oz. packages and I'm glad I did because the cheese was very good. This will be repeated.

Stuffed Yellow Squash

Delicious flavor! I drained the excess water from the pulp and then put the pulp through a food processor before I mixed it with the rest of the ingredients since I don't like to eat the seeds whole and the result was a very smooth delicious filling.

Fudge Puddles

These came out of the oven about an hour ago and I'm racing to rate this one. If I could, I'd give it a 6. I used Plugra European butter and Ghiradelli chocolates. This recipe deserves the finest ingredients. It makes ordinary cooks like myself look like pro masters. Easy enough for beginners; yet, tasty enough for masters. The perfect recipe. Also, I did have a little chocolate left over, but I really filled the cookies well with the fudge filling so I wouldn't have had enough to double batches as previous cooks had.

Roasted Chicken Salad Bites

This was a delicious recipe! Sam's Club has an excellent rotisserie chicken and I asked an employee there what seasonings they used. He said Lawry's prepares and sends a seasoning rub that is specially made for them. Anyway, I used the Sam's Club rotisserie chicken in this and the flavor blends were perfect and it was soo easy! My family scarfed this up.

Baked Spaghetti Squash with Beef and Veggies

It was very good to me. Half my family enjoyed it a lot and the other half thought it was "just okay." It seems like this is a dish that either you really like and are intrigued with the spaghetti squash or you are wishing it was real spaghetti. Healthy, though, and I give it a thumbs up for that effort, especially for low carb diets.

Chicken and Corn Chili

This one really deserves its five star rating! Yummie! I needed it for a large crowd. I sliced 4 whole chicken breasts horizontally to make 8 halves(approximately 3 pounds total) and then doubled the rest of the ingredients in a large crockpot. Although instead of doubling the pinto beans, I used just one can of pinto beans and then one can of black beans. For our taste, it took just a smidge over 1 teaspoon of salt and 3/4 teaspoon of pepper. I put the crockpot on low at 11 p.m. and it was perfect at 5:30 a.m. the next morning. I just turned it off for a little while until I was ready to add the corn and beans and let it cook for another 2 hrs. 45 minutes. Wonderful recipe - Thank You!

World's Best Lasagna

I'm not a Lasagna maker due to my incredible ability to mess things up the longer I cook, but the sauce turned out so good that it boosted my confidence and made the effort all worth it! I can see where some people might think it tastes a little salty, but my family didn't complain one bit - it got rave reviews and all eaten up. I might cut down on the salt a little the next time, but I think that's just really a personal preference. I took the advice to increase the amount of meat mixture to more than 1 1/2 cup each round and I'm glad I did. I would have had a lot leftover. Another thing, I'm going to increase the amount of cottage cheese filling next time because I prefer to have a little more in the lasagna than it called for. We loved it - Thank You!

Mrs. Sigg's Snickerdoodles

It might just be that we are not snicker doodle people, but this would not be a first choice cookie recipe for me to make again. For those who want to try this recipe, I can tell you that a minute does make a difference! At least in my oven. I baked two batches - one at 8 minutes and one at 9 minutes exactly. The 8 minute cookies had a chewier center (which I preferred) and the 9 minute cookies had a crispier center (which my husband preferred). Oh well...you five star people probably know how to bake them better than I do.

Pecan Praline Cookies

This is definitely a five star recipe, first for its ease, second for its taste, and third for its versatality. I've made this several times and without any additional ingredients, its excellent, but I also enjoy how you can tailor make this one to please a special someone by adding their favorite candy crushed topping a minute or two after it has come out of the oven. I've added miniature candy coated Kisses, M&M's, and Reeses Pieces, but our all time favorite addition was 3/4 cup Heath Milk Chocolate Toffee Bits found on the baking aisle. Thanks for a great recipe!

Absolute Mexican Cornbread

This cornbread is excellent! I do not like sweet cornbread, but I decided to try it because my family does. I found myself eating just as much as everyone else and our little chihuahua, Odie, who is the pickiest eater of the animal kingdom couldn't stay away from anyone that had a slice in their hands in hopes of crumb droppings.

Slaw-mmin' Wraps

I had to give this a five-star rating because even my husband who doesn't even like coleslaw ate three tacos while humming "mmmmmm" and I had absolutely no leftovers! This is a keeper in my family. I blended the hummus together for about 2 to 4 minutes because I found the better I blended the more creamier the hummus became. Absolutely delicious, thank you!
