About this Cook
My favorite things to cook
casseroles and desserts (esp. pies)
My favorite family cooking traditions
growing up we always had simple things like hamburger helper during the week and BBQ on the weekends. i am no longer a fan of either
My cooking triumphs
I never attempted baking pies until last Thanksgiving when i was chosen to bake them for my boyfriends family dinner. Since you can't sample your pie without tearing into it, lol, i was sure that i did something wrong but it turned out that they were awesome! they were a big hit with his family as well as mine (especially the apple/raison crumb pie). I received many more request for christmas pies and am now the designated "pie maker"
My cooking tragedies
Cookies!! i dont know what i do wrong, but they never come out quite as well as i hope. also, one time i was making a mexican casserole, which has been somewhat my signature dish for a few years now, and when i went to put some chili powder in the meat i poured the whole bottle in! what a disaster! instead of making new meat, i just "washed" it off and reseasoned it!

Colleen's Slow Cooker Jambalaya
I felt like the oregano overpowered this recipe, I only put in half of the amount and its still really strong. I think next time I'll put in just a pinch if any at all. Other than that it was super easy and had great flavors.

French Toast Casserole
Didn't work for me at all. I was really disappointed because I had been looking forward to making a french toast casserole for awhile. Not sure what I did wrong but it was extremely gooey/runny in the middle even after 2 hours of cooking. And the edges that were a good consistency didnt have much flavor. Oh well, at least it works for everyone else :)
