Pesto

For never making pesto this was super easy and very yummy. Even my 20month old dug into it. I did toast the pine nuts as other suggested. I am really excited to try the pesto pasta chicken from this website.

Chocolate Chip Oatmeal Muffins

We loved these, more like eating a cookie/cake than a muffin. I did add some flax seed to bulk up on fiber. I will be making these again!

Irish Chicken and Dumplings

Awesome, my picky husband loved it. I did take some suggestions from other reviewers. I used 3 cups chicken broth (I was using chicken I had roasted previously), 1 tsp pepper and 1 tsp poultry seasoning. I did eliminate the salt and potatoes. I followed the rest of the recipe and loved it. Next time I think I will try a previous review that used a 9x13 pan and cooking the dumplings on the top for 25min at 350 degrees.

Jennifer's Granola

My son and I really enjoy this granola alone, with milk and topping our yogurt. I did add flax seed for some more fiber intake. Next time I will spread out on more cookie sheets and reduce cooking time. Some of the granola was not as crunchy as I like it and then other pieces were burnt.

Quick Quiche

Very good! My little one loved them. I ended up using a muffin pan and made a varity of flavors (spinach, cheese & bacon, ham & cheese, bacon and cheese.)

Herb Roasted Pork

WOW!!! Hubby picked it and we loved it! He actually said it was a recipe to make for guests. The only thing you have to remember is to double the rub and sauce. (I only used a 2lb loing so if I was using a four quad the rub and sauce.) I think this would also be great for chicken.

Eclair Cake

Awesome, I followed the reviews and melted the frosting in the microwave, 30 sec stir then 15 sec stir and pour over. I also only had an 9X11 pan which it filled to the rim perfectly. I had my husband grab the pudding while shopping and he grabbed a vanilla and a cheesecake which ended up tasting great. Everybody at the party asked for the recipe. I made this today 1/13/11 and used a 9X13 pan, I think it looks better in the small pan.

"My husband is a very picky eater and he loved this recipe. The roast literaly fell apart and was so tender. The only thing I would do different is maybe less rosemary.
