Kat's Alfredo Potatoes

I found this recipe because I had some Newman's Own alfredo sauce to use up and wanted to make something besides another pasta dish. This was outstanding! If I made it again, though, I might try leaving out the butter. This is already really rich with the sauce and the cheeses; not sure it needs even more. The onions really make it!

Peppered Shrimp Alfredo

This was super-yummy and easy too. Only change: I used half as much cayenne and thought it still had plenty of heat, although this is a personal thing. And I used skim milk instead of cream. The consistency was still plenty thick, with fewer calories, and then you don't need to buy cream; everyone has milk on hand.

Oriental Sesame Slaw

I had some cabbage and some jicama to use up, which led me to this recipe. Just great! We added some shredded chicken as well. All it needed was a little salt and pepper.

Chop Chop Salad

Outstanding! A delicious mix of flavors, colors, and textures. We used already-cut-up grapefruit segments from the refrigerator case at the grocery store, and substituted cherry/grape tomatoes for the chopped tomato. The dressing I used was a raspberry vinaigrette, but I think it would be great with a poppy seed dressing as well.

Easy Paella

My husband loved this dish, but says that next time I should leave out the chicken and just have the shrimp and chorizo. I agree. It was a little dry from so much meat and not enough "sauce." When we had the leftovers, I added chicken broth to the meat mixture, and also stirred the leftover rice into the leftover meat mix. I think it would be better if the two mixtures were combined from the beginning.

Southwestern Cauliflower and Ham Soup

Hubby and I loved this! Lovely light flavor, with the cauliflower and potato providing "creaminess" without the cream. And just the right amount of kick from the pepper jack. I followed other reviewers' suggestions to substitute 2 red potatoes, diced, for the potato flakes; cooked them right along with the cauliflower. Unlike others, I didn't have a problem at all with the cheese sticking to the pan, probably because my pan is nonstick.

Indian Shrimp Curry

Made this exactly as the recipe says, and it couldn't be better! Served it over rice. It's a little soupy, so I would serve it in soup bowls instead of on plates. Hubby and I couldn't stop eating it!

Brazilian Black Bean Stew

Absolutely fabulous! Such an interesting mix of ingredients. I served it with some cornmeal biscuits, and we topped the stew with some Parmesan cheese. Hard to stop eating it!

Cheesy Chorizo Frittata

I found this recipe by doing the ingredient search for spinach and cherry tomatoes, since I had both to use up. Very tasty frittata and so easy to make. I made it exactly like the recipe, except there's one oversight in the instructions: It never mentions to add the chorizo back in. Be sure to stir it in with the egg/milk/cheese mixture before putting the frittata in the oven.

Zucchini Pasta II

Flavorful light sauce over pasta with veg. and chicken. The only change I made was increasing the amount of chicken. Next time I'll try adding more zucchini and peppers -- or decrease the amount of pasta to maybe 6 oz.

Pork Slaw Skillet

Followed the recipe exactly and it was outstanding! As another reviewer commented, much of the liquid evaporates right away, but the vegetables cooked so fast that everything turned out perfectly using the ingredients as listed. More water would have made it soupy, or if you took the time to boil it down, the vegetables would have been mush. The recipe was fast and easy and super-tasty as is.

Angel Hair with Feta and Sun-Dried Tomatoes

Really tasty. Other than adding shrimp, which I did since my husband's not big on vegetarian dishes, the only suggestion I would make is to save the water from draining the pasta because you may want to add some as you're stirring things, to make it more "saucy." The flavor is actually even better the second day, when you can add some chicken broth if necessary for more liquid.

Hamburger Steak with Onions and Gravy

Made this exactly like the recipe and it was outstanding. Hubby couldn't stop eating. I served it with mashers and succotash, just like the Salisbury steak at Cheesecake Factory! I agree with others that it wouldn't hurt to double the gravy. Very tasty!

Tender Potato Biscuits

I made these exactly like the recipe, and I agree with some others that the dough needs more flour. I had to add quite a bit on the board to be able to knead and roll them out. Very sticky dough. But the flavor is very good. I think I'll stick with my standard biscuit recipe for the most part, but this was a new way to use up leftover mashed potatoes.

Brooklyn Girl's Penne Arrabiata

This was really outstanding! For the chicken breading, I used only 1 egg and half as much bread crumbs (with full amount of garlic powder, salt and pepper) -- and still have bread crumb mixture left over for more chicken cutlets. I also used half as much red pepper flakes and thought it still had plenty of kick. AND I used only 1 tb. olive oil to saute the garlic and pepper flakes. No need for all that extra oil in the tomato sauce. Also substituted 1 tb. dried Italian seasoning for the fresh basil, since I'm not a huge basil fan. My husband loved this, served with a green salad.

White Beans with Rigatoni

This is not "bursting with flavor," although my husband thought it was very good and had three helpings! It is a nice, light pasta dish for a winter supper when you want to eat healthy and don't have a ton of time. I doubled the salt and pepper.
