Angel Hair with Feta and Sun-Dried Tomatoes

Really tasty. Other than adding shrimp, which I did since my husband's not big on vegetarian dishes, the only suggestion I would make is to save the water from draining the pasta because you may want to add some as you're stirring things, to make it more "saucy." The flavor is actually even better the second day, when you can add some chicken broth if necessary for more liquid.

Hamburger Steak with Onions and Gravy

Made this exactly like the recipe and it was outstanding. Hubby couldn't stop eating. I served it with mashers and succotash, just like the Salisbury steak at Cheesecake Factory! I agree with others that it wouldn't hurt to double the gravy. Very tasty!

Tender Potato Biscuits

I made these exactly like the recipe, and I agree with some others that the dough needs more flour. I had to add quite a bit on the board to be able to knead and roll them out. Very sticky dough. But the flavor is very good. I think I'll stick with my standard biscuit recipe for the most part, but this was a new way to use up leftover mashed potatoes.

Brooklyn Girl's Penne Arrabiata

This was really outstanding! For the chicken breading, I used only 1 egg and half as much bread crumbs (with full amount of garlic powder, salt and pepper) -- and still have bread crumb mixture left over for more chicken cutlets. I also used half as much red pepper flakes and thought it still had plenty of kick. AND I used only 1 tb. olive oil to saute the garlic and pepper flakes. No need for all that extra oil in the tomato sauce. Also substituted 1 tb. dried Italian seasoning for the fresh basil, since I'm not a huge basil fan. My husband loved this, served with a green salad.

White Beans with Rigatoni

This is not "bursting with flavor," although my husband thought it was very good and had three helpings! It is a nice, light pasta dish for a winter supper when you want to eat healthy and don't have a ton of time. I doubled the salt and pepper.

German Pancake with Buttermilk Sauce

I made the buttermilk sauce from this recipe to go with my own favorite German pancake recipe ... and the sauce is out of this world good! It's a terrific compromise between butter and pancake syrup ... so we plan to use it on waffles, pancakes, and other breakfast dishes, wherever we might normally use syrup. YUM!

Mediterranean Pizza

I followed some other reviewers to some extent and made these changes: used just one jar of marinated artichokes; brushed dough with olive oil rather than the marinade; used Italian seasoning rather than individual herbs; used salami instead of ham. Also I used the Trader Joe's pizza dough rather than the frozen bread dough. Outstanding! One of the best pizzas ever!

Greek Penne and Chicken

Outstanding flavor mix in this dish. But yes, as others have said, use about half as much pasta. (I always allow 2 oz. per serving.) And when you get it all mixed together in the last step, if you think it's a little lacking in "sauce," just add some hot pasta water or hot chicken broth. Oh, and I used cherry tomatoes in place of the chopped tomato, since most grocery store tomatoes are so hard and tasteless.

Onion Roasted Sweet Potatoes

The flavor of these is outstanding, BUT 40 to 50 minutes of baking time is way too long. If the sweet potatoes are "diced," they will probably be done in 10 to 15 minutes. I checked mine at 20 min., and they were already burned. Also, I recommend greasing the pan, even though the potatoes themselves are oiled. Then again, if you stir the potatoes a few times during baking, they would be less prone to sticking to the pan.

Winter Vegetable Hash

This needs a lot more salt, but otherwise it's a very tasty mix. I used butternut in place of the acorn squash and spinach in place of the kale. Be sure to cut the potatoes in 1/2" dice to ensure it cooks in the 25 min. specified.

Seafood Scampi Linguine

Easy to make and very tasty--a light veg. sauce that is a nice change from heavier tomato or cream sauces. I thought the garlic amount looked excessive, so I used half as much and probably could have used more. I also used only three-fourths as much pasta, which was plenty. My husband loved this. Would be great with crusty bread to soak up the excess sauce.

Garbage Quiche

I've made a lot of quiches, but Hubby said this was the best! I stumbled upon this recipe because I had some Gruyere cheese to use up, and this proved to be a real winner. Made it exactly like the recipe except used cherry tomatoes instead of Roma. Also, it was done about 10 min. before the recipe said. YUM!

Coconut Macaroons III

Outstanding! I made these when I had a partial can of sweetened condensed milk to use up. Just scale the recipe back for the amount of milk you have and there you go. I have two sizes of ice cream scoops, so I made cookies in both sizes. I prefer the smaller, which is a little smaller than golf ball size.

Cilantro Chicken and Rice

My husband absolutely loved this! So flavorful -- and easy to make. The only change I made was to use leftover rice, which I added just in the last few minutes, long enough to get heated through. Oh, and I added the cilantro right at the end too, rather than have it cook for 30 min. YUM!

Apricot Chicken III

I had some leftover apricot nectar to use up, so that's what led me to this recipe. I used drumsticks and found it to be one of the best chicken dishes I've ever eaten. And it couldn't be much easier. The sauce is wonderful over rice. I will make this for a dinner party with boneless thighs for less mess.
