About this Cook
My favorite things to cook
Pretty much anything, but I love cooking dinner for my family. I love that triumphant feeling I get when 3 or 4 things are cooking and they all get done at once. Even more so when my family compliments me on it!
My cooking tragedies
I tried to make these carrot cake cookies with cream cheese frosting.... the cookies came out like muffins, and the make-up-as-I-go-along recipe for the frosting was a disaster!

Avocado and Tomato Salad
I made this salad for a company BBQ that was desparate for some healthy veggies! I omitted the onions and mixed in about 1/4 cup olive oil and vinegar dressing into the mixture. I topped a bed of baby spinach with the tomato/avocado mix; and spread croutons around the plate. It looked great and was gone in a flash!

Empanadas
I used pie-filling peaches from a can for the filling. I cut them up into much tinier pieces, and the end result was great! I got a little frustrated while constructing the empanadas, but that was probably my fault for not working with properly chilled dough. I used to buy these all the time mexican tiendas down in Tucson, and I have to say that pumpkin and tres leches filled are the best!

Pizza Stix
I made these for a wedding shower, and they were gone in 15 minutes! I cut the string cheese in half to double the recipe and cut down on the serving sizes. I forgot to add the garlic; but I don't think anyone minded.
