Cottage Pudding (Cake for Strawberry Shortcake)

Fabulous! I can't stay out of it. So, sooooo good! Mine did take an extra 14 min. to bake....not sure why. I double checked my oven temp & it was right on but maybe it wasn't hot enough to start?? IDK, just keep that in mind, just in case you have to bake longer also.

Crisp Rice Chocolate Chip Cookies

Just "OK" for us. Kids weren't impressed w/a "crunchy" chocolate chip cookie & we did end up tossing them after they kept coming home in lunchboxes untouched.

Mormon Scalloped Potatoes

These are delicious!! I cut my potatoes about 1/4" & then cut them in half, like a half moon shape. Skipped the cornflake topping, as a personal pref. LOVE them!! Thanks, Kitchen Witch!!

Soul Smothered Chicken

I actually LOVED this but found the browning of the chicken to be a waste. Once you place the chicken back in the gravy, cover, & simmer, the skin turns soft & mushy. Once you start serving this, the skin falls off & you end up w/a mouthful at some point.That's the ONLY reason this gets knocked down 1 star. Flavor is AMAZING! Getting a mouthful of chewy chicken skin is disgusting, so I definitely want to try it w/blsl chicken next time....or at least pull the skin off...altho the bones got in the way also....yep, blsl will be the way for ME to go next time :)

German Potato Cheese Soup

This is absolutely delicious! I was out of red peppers, which I didn't realize until I had the soup started, so had to leave those out. I also didn't have the potato flakes so I whisked a little cornstarch in with a little extra mayo & whisked into the soup at the end. Perfection! LOVE the richness that the mayo adds & the combo of cheeses. Great with diced ham or bacon added in also. YUM!

Chicken Asparagus Casserole

I was looking for a way to repurpose some homemade chicken noodle soup. This was perfect! Because I was starting w/precooked noodles & chicken, my prep was a little different. I cut up my asparagus & sauteed it in a pan w/onions, mushrooms, red peppers, butter, & garlic. Added the soups, followed by the noodles & chicken. I tasted it before deciding to go ahead & add the cheese. This was super creamy...maybe a little too creamy for us but my ratio could've been off using the leftovers. I'd like to try it w/a different cheese also, altho the cheddar was good! Eating leftovers for breakfast as I rate it & they're even better than lastnights dinner :)

Mom's Favorite Baked Mac and Cheese

I left the onion out because I just have a personal opinion that onion doesn't belong in mac & cheese. I couldn't find "American" cheese other than American cheese slices(which are a cheese "product") so I used velveeta. In doing so, I probably didn't need the roux. I used half 2% milk & 1/2 half & half. I would NOT recommend doing that unless you like your mac & cheese so rich & thick you could use it for wallpaper glue :) Flavor is good. I think I'll make this again, using all milk & no flour.

This was sooo easy to make! I just finished these for a bake sale at our elementary school. Absolutely adorable! I doubled the recipe & spread it all out on a half sheet pan(approx. 17x13). Perfect!

Sweet Sriracha Chicken

Other than cutting the cooking time in (about) half, I made no changes. It was good, not salty in the least, as another reviewer indicated. I'm not a huge fan of orange chicken but the kids liked it :) Not too spicy for them either...just right!

Wet Burrito

For some reason I got it in my head that these were going to be a Beltline B copycat. Not so at all. Bummer cuz we just ate there 2 weeks ago & I was so excited to duplicate that recipe. Following the recipe to a "T", the meat is bland. I ended up adding a heavy dose of taco seasoning...at the very least, add salt. I LOVE cumin but it did not go well in the refried beans. The "gravy" was very good on it's own but once it was on the burrito, all of the flavors just fell flat. This won't be a repeat here, unfortunately, but hubby & I are racking our brains trying to figure out who else in GR is known for their wet burritos?? Maybe the Dungeon?

Pie Snacking Cake

I chose this recipe doing an ingredient search to use a can of pie filling I wanted to get rid of. So easy & quick to throw together. Didn't measure the pie filling, just used the whole can but I did chop up the apples so they were smaller. I also added extra cinnamon(because I do it w/anything that calls for cinnamon) & added a pinch of ground cloves. Loved it! Took it to a dessert potluck & it was a hit!

Simple Crustless Spinach and Mushroom Quiche

This is FABULOUS! I'm always looking for lower/no carb breakfast casseroles & quiche's & this is perfect! I didn't use the heavy cream(not sure why it's needed) & baked it in my small 10x7 cake pan, checked it at 35 min. & it was done perfectly. When I've made crustless quiche's in the past, they tend to puff while baking & fall while cooling. Not the case with this one. Absolutely LOVE this!

Homemade Chicken Gravy

This is fabulous! I can't believe that *I* just made this gravy!! Versatile enough to add in whatever flavors you like...I added a bit of poultry seasoning, salt, black pepper, & onion powder. I loved it before adding the cream but the cream definitely adds a richness. I'm glad I included it!

Brown Sugar Meatloaf

The topping was delicious! We did, however, feel that there was an "off" taste to the meatloaf. The only thing I can think of would be either the saltines or the ginger. I typically use ritz crackers or milk soaked oats in my meatloaf & have never used ginger, altho I typically really like it. Weird.

Slow Cooker BBQ Chicken

I made this w/ 1 1/2 times the sauce. Did NOT make in a slow cooker because it was a last minute decision. Put all sauce ingredients in a pan & simmered, added cooked, shredded chicken, simmered until the chicken had soaked up most of the sauce. I couldn't stay out of this it was soooo addictive! I hid a couple of portions away in the freezer & they reheated perfectly! Thanks for a winning recipe, SHELDAWG!!
