To Die For Blueberry Muffins

Super fantastic! I did add the vanilla...well, cause why not?? I think it adds that little extra warmth to the flavor....mmm. I made 6 regular and 2 in my muffin top tin. The regular took 22 mins and the muffin top took 15 mins. I may use the bigger regular tins for 6 next time because these really rise! The crumb topping made a little divit in the middle, which created and yummy topping and was almost like a filling. Oh, and I just used my hands to mix the crumbs - much easier than with a fork! Yummy y'all! Give it a try ;)

Shrimp Bruschetta

Delish! I think this is a great recipe that you could vary according to what it on sale/on hand/in season. I used 4 plum tomatoes and juice from a 1/4 of a lemon, then doubled the Old Bay, olive oil, garlic powder and left out the egg white because I was making it ahead. I added a dash of garlic powder to the mayo also. No extra salt or pepper is needed - Old Bay packs a flavor punch!

Cream Cheese Frosting II

This recipe is deeelish! I would probably make half the amount next time, if I was icing another bundt cake. It's good enough to use as a dip for fruit or something like that!

Mozzarella Meat Whirl

OK, so before I say anything else - I forgot the bread crumbs (duh!) I realized it aftr everything was rolled but, believe it or not, it still turned out great. I did as other did and added some seasoning. The sauce gave it a nice kick and, luckily, still adding the egg kept it from just tasting like a big burger. I used shredded cheese and I think that made it easier to roll. I also put the wax paper on a cookie sheet so that I could use it as a form - worked GREAT. This was easy and fun to make with my 9 year old son, and he loved it!

Banana Sour Cream Bread

Great recipe! I've made these with sour cream and Stonyfield's Banilla yogurt and they turned out awesome both times. I made them into muffins instead of bread and cut the baking time back to about 40-45 minutes. I also didn't have vanilla so I used almond extract, but cut the amount in half.

Blueberry Zucchini Bread

I had a HUGE zucchini and needed something to make with it so I found this. We had a pint of blueberries that needed to be used soon, so I thought it was worth a shot! This turned out SO moist and delicious. I was out of vanilla so I substituted almond extract, just half as much. I only had one large muffin pan so I baked the remaining batter in a 9x9 pan and it came out great in the 50 mins bking time. I did need to bake the large loaf pan longer though - closer to 70 mins. It turned out great and I will definitely make it again! I might try applesauce next time in place of some of the oil and maybe cut the sugar with a part of Splenda. We'll see!

Cinnamon Pudding Cake

I had a craving for something easy and cinnamon last night, so I whipped this up. I'd never heard of pudding cake, so I didn't know what to expect, I just went from the reviews. It seemed weird how the ingredients (no eggs, no oil) could turn into some kind of cake, but it sure did! I gave it a shot and it's OUTSTANDING. It kinda reminded me of a big warm muffin with sauce. I didn't have any fruit, but I think I would try to add them if I made this again - just for the variation. This would be a great brunch recipe!

Chocolate Chip Muffins

These are ok... I think it'd be better with some tweaking though. I used a cup of milk like others recommened, which worked well, but they were still awful crumbly. It said not to overmix, but maybe I'll have to mix a bit more next time. It's worth working with to get right though :)

Maryland Crab Soup

This was my first attempt at making soup and it was winner! I used the frozen veggies instead and it worked out perfect, and it was much easier. I also used crabs that I picked, including the seasoning & 'mustard'. I left the Old Bay on the claws too. I made cheddar garlic biscuits from this site, oh and it was even better the second day! I even froze some for when I need a fix later in the season :)

Rice Pudding

This is OUTSTANDING! I've never tried rice pudding before, but gave this a shot. I actually liked the amount of sugar because I'm not the "sickening sweet" dessert type. I ran a little short on milk, but the consistency was perfect & it gave me a good arm workout too! It's great!

Aussie Chicken

This recipe was SO good and easy! I cut back on the honey a little, only because I had less than I thought, but it seemed just sweet enough. I took the advice of one of the reviewers and used a little of the leftover bacon grease instead of oil and it seemed to bring out the flavor and give a nice savory balance to the sweet. In a pinch, in the future, I might use Real Bacon pieces - just to cut out that step. It has tons of flavor, so milder sides - like steamed veggies and/or mashed potatoes are a good idea. This is staying in the recipe box - A+!
