Black Beans and Rice

This was good, but I think it had too much of an onion and pepper taste and not enough of a bean and rice flavor.

Chicken Enchiladas V

I loved how easy to make and tasty this recipe was. To reduce the fat, I substituted with fat free sour cream, low-fat cheese, and used PAM to sautee the onions. Everything was wonderful. We will use this again.

Easy and Delicious Chicken

Very good. I left the italian dressing and juices in the mix instead of adding the chicken broth. A little tangy but very good. I can see how substituting the chicken broth would lessen the flavor. I served over cooked spaghetti noodles. Overall, a good recipe. I would make this again.

Easy and Delicious Chicken and Rice Casserole

Very easy to make. Good flavor. I added a little extra rice, since many stated the rice was too mushy. It came out great. I would recommend cutting up the chicken into smaller pieces so it can absorb more of the flavor. It was a little bland but very tender and juicy.

Zesty Slow Cooker Chicken Barbecue

The recipe has potential, but the time is off. I cooked it on low for 8 hours, and the sauce was burned and the chicken was all dried out. If the time was lessened, I think it would cook well, but do not use the higher times suggested.

Colleen's Slow Cooker Jambalaya

This was mediocre. It didn't taste like jambalaya. I am from and live in New Orleans, and the seasoning combination did not taste like jambalaya. Also, I was pretty confused once I realized that it was served over rice instead of cooked together as a flavored rice dish. While it was an ok dish that tasted kind of like spanish rice with meat, I'm going back to the Zateran's mix.

1-2-3 Vegetable Chili

This recipe definitely has five star potential with a few minor modifications. Upon the suggestion of others, I added more chili powder (probably 3-4 teaspoons). I tried it with the one and it didn't taste enough like chili. It was more vegetable/bean flavored. However, after the additional chili pepper and an added can of kidney beans, the chili was really good. Like others have stated, I would highly recommend cutting the zucchini into smaller pieces, so they cook better into the chili. Overall, great recipe. I'm glad we tried it.

Artichoke Spinach Lasagna

My husband and I loved this recipe. Pretty easy to make and very tasty. To lower the fat, I used fat-free feta and pasta sauce and low-fat mozzarella. The grocery didn't have vegetable broth, so I used chicken broth. I also substituted the fresh rosemary and garlic for dried versions. Still came out wonderful! We will be using this one again and again.

Six Can Chicken Tortilla Soup

My husband and I both loved this recipe. It will definitely become a part of our regular menu. I made a few modifications: used baked chicken instead of canned, added 1/2 packet of taco seasoning, and added 1 tablespoon of cornstarch to thicken the broth. It was fabulous. I also took the suggestions that others added to top with tortilla chips and cheese. I would highly recommend this, especially for those looking for a quick and filling meal. When making this recipe the third time, I decided to add a can of fat free refried beans to thicken the soup, and it was perfect. It gave the soup a great texture.

Sweet Potato Pie I

I have made this recipe four or five times and my family loves it. Sometimes, I'll replace 1/4 of the milk with sweet condensed milk to make it a little sweeter. My family likes it better with the extra sweetener, but it's good either way.

The taste was ok. I agree that it was missing something. The broth just wasn't quite right. Maybe not enough cornstarch on my part, but the flavor wasn't rich enough for me.

Yam Casserole

I cooked this for Christmas and my whole family raved about it. I was out of brown sugar, so I used all white sugar. The family didn't seem to mind one bit. Great recipe!!!

Loaded Potato Soup I

My entire family loved this recipe. I would recommend letting the soup cool slightly before adding the cheese or it will burn to the bottom. Also, I gave my family chopped green onion, cheese, and bacon bits as possible toppers for the soup.
