Salsa Chicken Rice Casserole

We made it a one skillet dish - brown onion & garlic & chicken, add soups, salsa, rice, frozen corn and some water, stirred it up and let simmer on the stove top. Then we added cheese at the end--stirred some in & sprinkled the rest on top. It was very tasty, but next time we'll probably use chicken broth in place of cream of chicken soup, we'll use canned tomatoes & our own spices instead of salsa, and add a package of hot green chile.

Savory Sausage and Rice Skillet

YUM! Great texture and flavor. Needed more cooking time than the recipe calls for to get the rice finished, but otherwise....very tasty.

Authentic Thai Cashew Chicken

Would add chicken earlier during onions & peppers. 2 T of sriracha. Needs a bit of corn starch. Add celery, maybe mango? Yum, though!

Very tasty. We'd like to make a sauce with more cinnamon, onions, tomatoes (maybe some diced tomatoes), and potentially spices (cardamom, coriander). Very delicious though, and makes a ton of food!

Addictive Sweet Potato Burritos

The flavor was okay--I upped almost everything and added ginger to give it something special. I prefer burritos with distinct ingredients & varying textures, which does not fit well with this recipe.

Slow-Cooker Chicken Tortilla Soup

We added 3 dried NM red chiles and a bunch of green chile powder...it was amazing. Loved it. We also just put tortilla chips on it...too lazy to toast our own tortillas.

I didn't add any salt (the juice I used was already quite salty), but otherwise followed it exactly. It was great! It was a little too sweet for my taste, but I'll just use a bit less sugar.
