Hash Brown Quiche

A very delicious dish for breakfast. I am not usually a ham fan, but this tasted just perfect. The only thing I changed was increasing the eggs to 5. My family gobbled it up.

Hot Fudge Sauce II

Absolutely divine! I halved the recipe, then cut the milk down to a little less than a cup to make it a little more "fudgy" than runny. We drizzled it over ice cream cake, but my husband kept sneaking spoonfuls to eat by itself. So good!

Angel Food Cake III

Very delicious. It turned out perfectly even though I only had 10 egg whites. I just had a little trouble with it sticking to the pan (and I even used cooking spray). I sliced and layered this with raspberry ice cream to make an ice cream cake, and it was absolutely wonderful. I will definitly make it again.

Stuffed Eggplant

This was so good! To easily scoop out the eggplant, I used a melon baller. I used ground pork sausage (mild), since that's what I had on hand. I also reduced the bread crumbs to 1/2 c. and used apple cider instead of the wine. Then I topped it off with mozzarella cheese. Delicious!

Dana's Tropical Fruit Smoothie

Yummy. I used an 8 ounce can of pineapple tidbits, since that's what I had, and it turned out just right. Any more and it would have been too pineappley. I also added a little honey. My 3-year-old thought it was a real treat.

Pumpkin Bread II

What a yummy fall recipe. I cut it in half to only make 1 loaf, and it turned out great. I substituted half of the oil with applesauce, half of the flour with whole-wheat flour, and sprinkled in some flaxseed. I also added in some chocolate chips. My family loves waking up to eat it for breakfast.

Stuffed Pepper Soup II

Very yummy. I put in just a dash of cinnamon, and we really liked it. It gave it just the perfect little "something". My husband kept telling me how good it was and that it really tasted just like a stuffed pepper. It does!

I doubled the pumpkin because I really like pumpkin, but other than that this recipe is just perfect! What a delicious and different cozy comfort food. Perfect for warming up a cold evening!

Rice with Black Beans

Hearty and delicious. Just needed a little tweaking - I used brown rice instead of white, minced garlic instead of powder, and added some chopped, cooked chicken and about a cup of mild salsa. Then I topped it with a garnish of shredded cheddar. It was very easy to make and so good - I'll definitely be making it again.

Chicken Quesadillas

A really good, quick, and easy meal. I just added a can of chopped green chiles and a handful of partially mashed blackbeans. I served them with tomato soup. The fam loved them.

Easy Quiche

This was really good. I added in some chopped onions and traded the broccoli for spinach. I also used 2 eggs and then egg whites in place of the other 2 eggs. My 4-year-old had 3 helpings, and that is very unlike her!

Baked Rice and Vegetables in Broth

We didn't really care for this, and usually I love anything with rice. It turned out rather soggy and was pretty bland. I used rosemary, as another reviewer mentioned, and it was the only thing that really gave it any flavor.

Melanie's Beef Barley Soup

Very good, although I did make quite a few changes. I added a can of diced tomaotes and 3 cups of tomato juice. I also left out the bag of frozen vegetables and instead put in 1 cup of corn and 1 cup of chopped zucchini. And I changed the chicken broth to beef broth. After all, it's beef soup, right?? Soooo hearty and good.

Kellogg's® Chocolate Scotcheroos

This was just what I was looking for! However, I just omitted the butterscotch chips because I was really wanted just chocolate and peanut butter (my faves!). For the topping, I did 1 1/2 cups semi-sweet chips and 1/2 cup peanut butter. Everyone loved them!

Chicken and Corn Chowder with Thyme

We really liked the flavor of this, but it was a bit runny. I added cornstarch (mixed into a little of the broth then stirred into the soup) during cooking, and then let it sit a little while after cooking, and that thickened it up a bit. I think adding a can of cream of mushroom soup might also help thicken it up and add some more flavor next time. I used whole milk instead of half and half because that's what I had. I also added about 2 cups of shredded cheddar at the end of cooking and we topped our bowls of soup with a little more cheddar.

Pumpkin Pie Pudding

I didn't have time to cook this in the crock pot, so I put it on the stovetop, covered, on low, and it was done in just 1 hour. (Don't stir until it's done). This was so yummy and easy to make. I am a huge pumpkin fan, so I really loved it. I did double the pumpkin pie spice, to give it a little more flavor. When it was done, I used it to fill little mini pie crusts (that I had baked in a mini muffin pan) to make pumpkin tarts, and I topped them with fall sprinkles.

Baked Potato Soup V

Soooo cozy and delicious. I used 2% milk to make it lower-fat, and also used just 1 stick of butter and 1/2 cup flour. After cooking the potatoes in the microwave, I cut them into chunks and left the skin on because I love potato skins. I didn't have any green onion, so I put in some dried, chopped chives and dried, chopped onion. It was so good. It did end up a little too thick, though, so I added a little more milk at the end of cooking.
