Italian Sausage Soup with Tortellini

Reviewed: Jan. 19, 2012
Awesome recipe, thank you! Small changes to adapt to what was on hand: I used a large can of whole tomatoes and cut into small pieces instead of fresh tomatoes. I used liquid from the can instead of water, and I used 1/2 tsp of dried basil instead of fresh, and added dried parsley at the same time too. I added extra carrots and zucchini too. Awesome recipe!! Quickly a family favorite!

This looks intimidating, but don't be afraid to try it. It takes some time, but it is well worth it! What a great way to celebrate a special occasion or prepare for guests.

Russian Tea Cakes I

Oh my, these are so good! I made one batch to share with those I work with and quickly regretted not doubling it to have more to "sample." : ) I also recommend rolling them in powdered sugar while they are very warm, and again a few minutes later. I received rave reviews at work, perfect recipe, thanks for posting it!

Chocolate Mint Cookies I

Reviewed: Dec. 24, 2011
I doubled the recipe to make cookies for those I work with as well as a few neighbors. I used a Tablespoon to measure each ball so they would all be the same size and yielded about 125 cookies. So, one recipe (unless you make gigantic cookies) should make about 60 or more nice size cookies. They are delicious too! I got rave reviews for sure! Don't skimp on chill time, the longer the better. And don't crowd the pan, they'll look nicer if they don't cook together.

Andrea's Pasta Fagioli

Reviewed: Mar. 7, 2011
Recipe is great, but would recommend a few changes. I used 4 cups of chicken broth and the rest I used water. Another can of beans would be a great addition. I used the advice of others and kept the pasta and soup separate until serving, and kept remaining leftovers separate as well and mixed when reheating. One pound of pasta was too much, I'll reduce to 3/4 pound next time.

Absolute Mexican Cornbread

Reviewed: Mar. 18, 2010
Not a crumb left! I cut the recipe in half and baked in a large cast iron skillet at 325 for about 35 minutes and it was perfect. I added chopped fresh jalapeno, omitted the sugar, and used a little more green chilies than it called for. I may cut back on the butter a little next time, but this was really good and a huge hit with family and a dinner guest.

Pineapple Upside-Down Cake VII

Reviewed: Mar. 2, 2010
Awesome! I made this last night for the first time, and it was perfect. I used Yellow cake mix, and instead of using all water in the cake mix, I used all available Pineapple juice from the can and then finished off the remaining balance of liquid with water. I couldn't fit all of the mix into my large cast iron skillet, so I made a couple of cupcakes too. The cake was flawless, and my husband, son, and his girlfriend and I about consumed the whole thing!

Clark's Quiche

Reviewed: Feb. 18, 2010
I made this for a special Valentine breakfast for my husband and it was awesome! Heed all warnings to use a deep dish, it won't fit otherwise. The only change I made, besides cutting the recipe in half, was I mixed the Bacon mixture with the Spinach/Sour Cream mixture and was happy with that result. Thanks for the great recipe!

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

Reviewed: Feb. 16, 2010
SAUCE REVIEW ONLY: Yes, it takes a long time, but it is not involved. It really is worth it, great sauce! I prepared it for Valentine's Day for my husband and served with a Filet Mignon, Roasted Asparagus, Baked Potato, and Crab Cakes (I opted to make a different Crab Cake recipe to serve verses stuffing the steak with the Crab Stuffing). Next time I will prepare the sauce with a Boneless Ribeye as the Filet Mignon isn't what makes it special. You really should try the sauce recipe, you won't be disappointed. Just allow at least 2 1/2 hours for it to do its thing. And I did heed warnings and used lower sodium Beef Broth. Was a good idea indeed.

Green Bean and Mushroom Medley

Great recipe, I make it for big family gatherings by doubling the recipe. I would caution against using as much of the 'salt' additives. I forgot that this past Thanksgiving and it was really overpowering.

Jalapeno Popper Spread

My husband and I made this recipe for the first time as a appetizer for dinner guests. What a hit!! We used 1/2 mayo and 1/2 sour cream, and topped it with shredded mild cheddar and baked it. Next time will stir in the cheddar instead so every bite has cheddar and dips easier too.

Margarita Cake

Reviewed: Nov. 6, 2008
If I could give this cake more than 5 Stars, I would! I made it for a Co-Workers Birthday and she ate 3 pieces, everybody else had 2! I used White cake mix like others had suggested. I also used the juice of 2 limes in the mix, and 1 in the glaze. You do need lots more Powdered sugar in the glaze than it calls for too. VERY MOIST!

Rempel Family Meatloaf

Reviewed: Oct. 23, 2008
If your meatloaf recipe doesn't get the family cheering, try this one! Children included! One of my step-sons requested this as his birthday meal, he loves it that much! After making this in a loaf pan for over a year, I decided to try using a muffin pan instead. It cuts the cooking time in HALF! I seperated the mixture into 10 muffin cups. Now it's even less time to an awesome family dinner on a work night.

Garlic Chicken with Orzo Noodles

Reviewed: Oct. 23, 2008
What a great recipe! I found a terrific sale on fresh Spinach and Chicken on my way home from work and was grateful to have found this one. This recipe was perfect, quick and easy. We cooked the orzo in chicken broth like others mentioned and recommend it highly. It was a bit 'kicky', but that could have been from the heavy hand of my husband when I wasn't looking:)
