Bread Pudding III

This was a great recipe! A friend wanted a way to use loaf ends she didn't want to waste, it was quick easy and very tasty. It was sweet enough for the kids to enjoy and not too sweet for the adults.

Rolled Fondant

This is AWESOME!!! I wanted to do something special for my daughters' 2nd birthday and this was it! I would recommend if you have a bread machine, clean it out and use it on the dough setting to give this fondant a good knead. It has an excellent consistence and rolled out AMAZING, this was my first time using ANY fondant. I couldn't find glycerin to use so I just added 1TBS vegetable oil and it worked great and tastes great!

Simple White Cake

This was SO Simple, I am looking for opportunities to do it again! The recipe is enough as it is for a small batch and doubling it is VERY easy. I used this recipe to make a thin 9x12 layered sheet cake for my daughters' 2nd birthday.

Ham and Pineapple Dinner

This was alright, I didn't see the need for the vinegar in the sauce, the smell of it turned my toddlers against eating it and they will usually try just about anything. I will omit that the next time I try this. I would use crushed pineapple instead of chinks next time also, the chunks were a bit much. I may try one of the other reviewer's suggestion and add other veggies. All in all a decent recipe, not A+ for our family, but one that we may try again, with a few tweeks.

Broiled Tilapia Parmesan

I have been looking for a way to prepare Tilapia for my husband in a way that he will enjoy, and this was it! THe flavor of the cheese blend was excellent, my entire family ate it with WILD abandon! This is certainly a KEEPER, I may adjust it and try it on other meats.

Carne con Chile Rojo

This was excellent, it had an outstanding flavor to it and we all enjoyed it, I will certainly cut my meat a little smaller and consider simmering the sauce and meat in a crock pot to let everything simmer in together. I simmered the meat and sauce on low for an hour waiting for my husband to get home for dinner and it was great! This will make it into our dinner meal rotation!

Easy White Chicken Enchiladas

I rarely make any recipe per the instructions, this I did follow the instructions, they were a BIG hit! They were super fast to make and were excellent as left overs, I WILL be making these again.

Amazing Butternut Squash

I am a fan of Butternut Squash, this was a simple recipe. My husband that isn't a fan of squash on principle liked this recipe well my version of it. i added a little garlic to the squash and onion mixture. I didn't boil the squash, I steamed it in the microwave for about 8 minutes with the onion and garlic. I used a little more brown sugar. I didn't have any saltines but I did have some pretzel/crackers and used them instead, it turned out very tastee!

Mom's Best Peanut Brittle
