Joey's Peanut Butter Cookies

I will use this recipe again for a traditional peanut butter cookie. I had to bake mine a bit longer to keep them from cracking while taking them off the sheet.

Vegan Chocolate Cake

I think these are very good cookies. I followed previous suggestions and added 2 Tablespoon lemon juice to the batter to receive the desired consistency,rolled the dough into logs and then chilled for one hour. FYI - using a makeshift double boiler (stainless steel bowl on top of a saucepan with 1" water) I stirred for 25 minutes until receiving the correct consistency of the filling. It was my first sandwich cookie. I definitely tasted the lemon in full force which was my desired outcome. Thanks for the recipe - will make them again time permitting.

Heavenly Zucchini Salad

Easy A La King Biscuit Casserole

I followed this recipe with the exception of using all fresh veggies but had to add spices to give it the quick I felt it was missing - poultry seasoning, celery salt, marjoram, pepper and sage. Good comfort food recipe that isn't too bad for you.

Chicken Pasta I

I thought this was a good, basic, light option for a chicken pasta. The only thing I did was add a handful of quartered fresh cherry tomatoes and some splenda to cut back on the acidity. I wasn't wowed but considered it a tasty easy dish. I will make again.

Apple Pumpkin Muffins

I was craving pumpkin pie but didn't want to deal with a crust so chose this recipe instead. I modified the recipe with some of the suggestions given previously. I used whole wheat flour instead of white, regular Splenda instead of sugar, didn't use any oil, skipped the streusel topping and added 1.5 chopped walnuts to the batter. Absolutely fabulous. Thanks!

Black Bean Tortilla Casserole

This was a good casserole recipe that you could easily modify to fit one's taste. I used green chilies instead of green pepper and didn't use as much cheese. Also had sour cream and cilantro for a topping. Might try adding corn next time as well.

Hot and Sour Chicken Soup

This was a good rendition - The only thing that I might try next time is rice or regular vinegar instead of the red wine vinegar. I didn't have bamboo shoots and added more flakes. Otherwise followed the recipe. I will make again.

The Perfect Chocolate Chip Cookie

This recipe as is produced a very oily batter that needed more dry ingredients to make it the right consistency. I'm not sure how much more past the 2.5 cups of flour I used because I added some little by little. They tasted ok - but I won't try an oil vs shortening/butter/margarine recipe again.

Barb's Chocolate Cake

This was a really good cake - I used vinegar/milk for a substitute for the buttermilk with no problems. I chose to ice the cake instead of frosting because I thought it would be overpowering with a thick frosting.

Fabulous Frosted French Toast

This was a nice twist to regular french toast. However, I felt that having the toast and the frosting be so sweet was somewhat overpowering. I am going to try making the frosting for potato pancakes and crepes.

Unfortunately I am unable to find Liquid Smoke where we live which I think would have given this the flavor it was missing. This recipe is definitely not for the waist watcher.
