Chocolate Zucchini Cake I

Wonderfully rich yet simple. It did freeze very well. Served with a bit of whipped cream on top. Absolutely perfect.

Absolutely wonderful! As a point of clarification, I "beat" the batter with the mandarin oranges on a low setting, which broke up and dispersed the oranges. Assuming that is what was intended, but it wasn't noted in the recipe.

Zucchini Bread VII

This is absolutely wonderful! I made mine with frozen shredded zucchini leftover from last summer's harvest. It was moist and tasty. Will definitely make this one again.

Slow Cooker Ribs

I skipped the pre-boil and placed them directly into the crockpot. Set it on high for 1 hour followed by low for 3 and ended up with great ribs.

Spicy Squash Casserole

Can't eat spicy food? I made this recipe without the jalapenos, using Italian-seasoned bread crumbs for the topping instead of crackers. I was afraid it might be too bland, but it is now a new family favorite!

Squash and Zucchini Casserole

I never follow a recipe exactly, so I shouldn't be rating this, but it was great. I actually made this with a mexican-blend shredded cheese in place of the romano cheese, went a little heavier on the tomatoes. It was quite luscious.
