Zucchini Bread IV

Sorry, but this was not a very good recipe for me. It tasted like cinnamon and sugar baked bread. I used 1/2 of the sugar called for and used mostly brown sugar. My husband and his co-workers loved it. But I will not make it again.

Tomato Zucchini Casserole

This was a great recipe. Very tasty. A tad bit watery even after letting it sit for 10 mins. I just poured the water off and served it. Probably would be perfect over pasta. These were the mods I made: mozzarella cheese instead of cheddar; 1/2 cup fresh oregano; 1 cup fresh basil; and 1/2 cup onion. I just layered the cheeses and the spices because I was using block mozzarella instead of already shredded. Perfect!

Zucchini Casserole I

This was absolutely the best recipe I've found. Only mods I made: bread crumbs instead of corn flakes; cooking spray instead of olive oil; 1 cup fresh basil; and shredded parmaesan cheese. It was especially good the next day as a leftover!
