Ten Minute Enchilada Sauce

This was good, I especially liked the fact that the ingredients called for were things I already had in my cupboard. I used this sauce for Gerry's Chicken Enchiladas found on this site.

Homemade Flour Tortillas

It never occured to me to make my own tortillas until it was one of the Daily Dish recipes that are emailed every day. I was very impressed with how easy these are to make. At 1st I didn't think there was enough shortening called for, but trusted the recipe anyway and went ahead with it. It turned out fine and made the medium sized tortillas you'd buy in the store. I doubt that I'll go back to buying them now, these are just too easy to do it yourself. It might be fun now to try making different flavours like they have in the store.

Dee's Roast Pork for Tacos

I also threw this in the slow cooker (since its a perfect way to make succulent meats).I didn't add any liquid and there was just the right amount of juice to add back into to the pork once I shredded it. I used a 3 lb. roast so only used 1 can of green chilies. I only had a couple of tbsp of chili powder and no taco seasoning so I improvised by throwing in a bunch of stuff I had on hand: the chili powder, cumin,paprika,seasoning salt,chipotle powder,oregano and even a pinch of cloves and of course plenty of minced garlic. Sorry, I don't know the exact amounts, I rarely measure anything - just add what I think is right, but it was a lot of spice if that's any help.(probably equivilent to a package & a half of taco seasoning though.) I also added a minced onion. Since I got late starting it I cooked it on high for about 5 hrs. I combined this recipe with another on this site (Mexican Style Shredded Pork) and served it on top of rice and black beans (with lime juice and cilantro stirred in after it was cooked). It turned out GREAT...just the right amount of spiciness with a lot of flavor. Will definitely be making this many, many times! It was so easy AND inexpensive. Thanks for sharing.

Hot Chicken Liver and Fennel Salad

I liked this dish as did my two boys (I had my doubts about them but made it anyway). I too was looking for something different to do with fennel and thought this looked good...and talk about healthy! Liver and spinach in one dish! I didn't have capers but substituted with green olive tapenade that was on hand. I also didn't use as much oil but otherwise stuck to the recipe as written. It was quick and easy to make and definitely will make it again.

Lemon Barbeque Meatloaf

This was actually quite good. I've never been much of a fan of meatloaf but this sounded interesting so decided to give it a try. It got two thumbs up from everyone - even my 2 year old grandson. The sauce, especially, is very tasty. I'll be making meatloaf more often now, but I'll be using this recipe.

Steamed Zucchini

Wow, this surprised me. I needed something really quick and easy since dinner was basically ready but I had no side dish prepared yet. This couldn't have been simpler! Just added a little S & P to top it off. Love the garlic. Thanks for the recipe!

Slow Cooker Spicy Black-Eyed Peas

I had to make a few changes due to time constrains and lack of ingredients but nothing that would have altered the taste very much, so I can confidently give this recipe the 5 stars I think it deserves. I cooked it on top of the stove in a cast iron pot on slow heat for a couple of hours. The beans softened up just fine. I didn't have the ham or bacon, but used a one and a half pound pork loin roast, cubed, and added a little liquid smoke. I didn't have a fresh jalapeno, so substituted a can of salsa verde. I only used about 4 cups of water though so that it would be thicker, like a stew. Served over basmati rice...made a very nice meal.

Halibut Steaks

This makes a real nice summer dish. I love how versatile it is...you can really use just about any fish and any combination of vegetables. I was looking for a way to serve up some frozen boxed haddock fillets and used this recipe. I didn't have mushrooms or zucchini but did have yellow and orange bell pepper and asparagus. So with the red tomato, it made a beautiful looking dish. I also had some fresh basil and lemon thyme growing so used that instead of the dried basil. With a side of rice (cooked in chicken stock and some chopped green onions stirred in afterward) it made a complete meal. The only down-side was that I didn't make enough! Everyone liked it and it went fast.

B.L.A.T. Wraps

I did alter this recipe just a little. Instead of tortillas I used pita (warmed in the microwave 15 sec for easy wrapping and pliability), instead of shredded lettuce I used 1 large lettuce leaf to line the pita so it wouldn't get soggy, and instead of ranch dressing I used my homemade taziki sauce. We absolutely LOVED these! I never would've thought of putting avocados in your basic BLT. Thanks for the inspiation, Christina!

Dirty Rice

Oh my gosh, this was so good! The only changes I made was to use cubanelle peppers instead of green (too expensive this time of year), red kidney beans instead of black, and 1 tsp of ground chipotle chili pepper instead of the 2 tsp of annatto - it's what I had on hand. I served it as a side dish to the Cuban Pork Roast and Spicy Mango Salsa recipes also found on this site. Will definitely make again. Thank you, Jen!

Roasted Curried Chicken with Couscous

I really liked this, it reminds me very much of the chicken at the ethiopian restaurant that I love. I liked the couscous but my kids didn't very much, maybe it's the texture. So next time I'll substitute it for basmati rice instead (like the restaurant). The spices are just right, flavour-wise. As for the amount of spices this recipe makes, SunnyByrd is right, this will stretch easily to accomodate more chicken. Oh ya, I used whole chicken legs instead of the whole chicken and baked them for an hour at the recommended temperature. I also didn't have lemon so used lime instead. Very good, I'll most definitely be making this again!

Cuban Pork Roast I

This is a great recipe. The only change I made was to use white wine rather than sherry (didn't have it). I served it with Spicy Mango Salsa and Dirty Rice (both found on this site). The whole family raved about it and even went back for more. This is something I would definitely make for company, everything was easy but the results were impressive!

Gerry's Chicken Enchiladas

Well, as other people have said, it was very time consuming but worth it in the end. Everyone loved these. I think next time I'll use a stewing hen or chicken legs to cut down on the cost. I made the 10 minute enchilada sauce found on this site. It went with it quite well I thought. For some reason I got double the amount of enchilads even though I followed the recipe, which was great since everyone got their fill. I will definitely make these again.

Honey Lime Chicken Wings

Spicy Mango Salsa

ooooh, so good!!! Like others i used canned peaches because of the time of year. I also used cilantro instead of the basil and jalepano pepper rather than the serrano. I served it as an accompaniment to the Cuban Pork Roast and Dirty Rice - recipes both found on this site. My kids raved about dinner that night and couldn't stop from going back for more! Will be making this again - thanks for sharing!

Thai Chicken with Basil Stir Fry

I love the basil dishes in the Thai restaurants here and it killed me that I didn't know how it was made - til now! This is definitely a 5 star recipe but I did this slightly diferently which brings it up to 10, for me. First, instead of coconut milk, I used coconut cream (which I got at the asian market). It is quite high in saturated fat, but so is the milk anyway, and it's not like I'm eating this everyday. But the cream is so much more rich and creamy and brings in a depth of flavor that the milk cannot. I also got the Thai basil there instead of using regular basil. I think the Thai is a little more subtle and not as overpowering as regular basil might be. And I didn't use the whole amount either, more like a cup. I also did what the restaurants do too: used white mushrooms, quartered and sliced zucchini and chinese eggplant (which I added during the last few minutes since they don't take much time). Finally, I personally like a lot of sauce to sop up with the rice (which I serve on the side rather than underneath - just persnal preference), so instead of letting the sauce reduce, I actually cover the saucepan. This not only steams the vegetables and cooks things a little faster, but adds to the amount of liquid. Then, to thicken it up, I just use a couple tsp of cornstarch mixed with a small amount of cold water. This dish turned out just as good, if not better, than the restaurants! So thank you, Gabrielle for submitting this...I could just kiss you! lol

Moroccan Salmon Cakes with Garlic Mayonnaise

I love this recipe and have made these cakes quite a few times. And nutritionally, I think they're a good choice, although the fat content appears to be quite high, but that's probably due to the mayonnaise, so maybe using light mayo would cut down considerably with that. But if you click on 'view detailed nutrition' you'll see just how good for you these are. I don't change a thing except to add the eggs as a whole (not just the yolks) and I've had no problem with the patties falling apart. The mayonnaise sauce really makes it special so for anyone who decides to skip it, I think you're missing out. For a change, tzatziki would also be a great choice. Very good!

Mexican Rice III

I was looking for something quick and easy to go with Gerry's Chicken Enchiladas (from this site). This recipe did the trick. I didn't use the jalpeno but know it would've been a nice addition if I'd had one. I stirred in the cilantro just before serving and squeezed a fresh lime over all at the end. I found it gave it that little extra zing.

Spicy Cilantro Dressing

This was really good! I did add a garlic clove, but it would've been just as good without it too. It was an excellent accompaniment to the Morrocan Salmon Patties on this site, and it's fun to see how other reviewers are using it too. Great recipe...thanks!
