Pumpkin Wheat Honey Muffins

We loved these muffins! I ground soft white wheat and oat groats (because I ran out of wheat), added some extra spices - cinnamon (3/4 t), and a 1/4 t each of allspice, nutmeg, and ginger. I used a heaping cup of squash that I had baked and frozen - I was worried that this would be too wet, but it turned out just fine - I did have to bake for *much* longer (10-15 minutes, extra). We used chocolate chips instead of raisins. Yum. I will definitely make these again. I think the sugar could be cut back on a bit, so I'll try that next time.

Pie Crust IV

Great, easy pie crust recipe. To easily incorporate butter (which I used instead of shortening), I grate it with my cheese grater, and then use my (not-so-great) pastry knife to mix.

Chocolate Zucchini Cake III

So yummy. Very rich chocolate cake - I couldn't even tell there was zucchini in it. I used 4 oz of unsweetened chocolate instead of cocoa powder, as I was out. Reduced the oil to 1 cup. Used coconut oil instead of vegetable oil. And left out the cinnamon. I baked in 2 x 9" layer pans for about 55 minutes. Frosted with chocolate cream cheese frosting from this site.|Upping my rating to 5 stars. Again I left out the cinnamon, but everything else is as written in the recipe. Baked in muffin tins - be sure to use papers, they were sticky little buggers - could be because of my smaller helper who greased the pans. Again the zucchini was not detectable - I'm convinced it just magically evaporates. This should be your go-to chocolate cake recipe. Freeze shredded zucchini so you can make it year round!

Fried Rice Restaurant Style

This was pretty good - maybe 5 stars is in order, but I'm not a huge fan of fried rice. I cooked brown rice in chicken broth, and that was tasty. I also added an onion before I stir-fried the veggies. Used peanut oil instead of veg oil. I wonder if I can freeze this - there is a lot! I'm not a huge fan of eggy fried rice - and this was just right. I think I'd add more peas next time.

Morton® Chocolate Ice Cream

I'm giving this recipe 3 stars because it got mixed reviews in my house. I really didn't like it - I think I just didn't like the lack of eggs - if you are looking for a light ice cream, this might be for you. My husband, who does not like chocolate ice cream, ate it, saying that it tastes like the milkshakes he had in school that he always thought weren't actually ice cream. My three year old said it was better than the last recipe (which she really didn't like).
