All-Around Good Smoothie

I make this all the time, and pretty much any frozen berry goes great with this. I always add a handful of bagged spinach, and you can't even taste it! I make this for my kids with the spinach too (leaving out the soy powder) and they still to this day have no idea that they're drinking something with spinach in it. :)

Brenda's Apple and Pomegranate Crisp

Just made it tonight and it was absolutely delicious!! Some reviewers had mentioned that the topping wasn't enough, so I just made sure not level off when measuring and had just enough. Also, in response to other reviewers complaining of the pomegranate being too crunchy, perhaps it wasn't ripe enough? We had no issue with the pomegranate being too crunchy, but it did complement the apples beautifully.

Cheesy Salmon Pasta

Great base recipe, and of course changed it a bit to our liking. I added a bit more pesto, as well as a shake or two of Italian seasoning that seemed to give it just what it needed. Also added a few drops of Sriracha chilli sauce (idea from Teena's Spicy Pesto Chicken on this site) when serving, and it was amazing!! I'm not a huge fish fan, so this was a great way to get some fish in our diet w/out being able to to taste it too much.

Pumpkin Pecan Cheesecake

This is definitely more of a creamy pumpkin pie than a cheesecake, but wow! Followed directions exactly (except used pecan halves instead of chopped) and all I can say is that it takes pumpkin pie to a whole new level and was AMAZING. The texture was creamier and the flavor was rich (I think due to the pumpkin butter), but not too rich to where you can only eat one or two bites.

Asian Lettuce Wraps

I've made this as is, but love it way better with ground chicken (it's supposed to be made with ground chicken or duck). Also used spring roll wraps instead of the lettuce (b/c that's what we had), and added half a bag of stir-fry vegetables when browning the onion. Served with hoisin sauce and red pepper paste and added sliced avocados and rice in the wraps. The kids loved wetting the spring roll wraps for everyone too.

Banana Frittata

Excellent recipe. Followed suggestion of other reviewers and mashed the bananas instead of chopping them. Also, served them as pancakes, as that was the easiest way to get it turn over. And a pinch or two of cardamom powder compliments it beautifully!

Chicken Suiza Cornbread Bake

This was an excellent dish as long as you make some additions suggested by others (thus the 4 stars). The additions are the half can of rotel, cream of chicken, and packet of taco seasoning. Otherwise it would have been way too bland. Also, used only few Tbs of butter and 2 eggs. Definitely going to make this again.

Awesome Slow Cooker Pot Roast

Followed suggestions from "sdgirl" as my roast was 2 3/4 lb. and it turned out amazing (be sure to use low-sodium beef broth). The only thing different was that I rubbed the entire roast with McCormick's Montreal Steak seasoning and then seared it in a little olive oil. Didn't even have to cut the meat as it was just falling off .

Ground Beef Enchiladas

This recipe is excellent!! I noticed some reviewers seemed to think something was missing...I always make it with 2 lbs. meat, 1/2 a bell pepper, a little more jalapeno, half the taco seasoning and 3/4 can red, hot enchilada sauce. All those extra ingredients add a lot more flavor. Also, I use flour tortillas instead of the corn. You'll have to use a 10x15 baking dish just to fit it all. It is a lot more delicious this way!!!

Apple Bavarian Torte

As others have mentioned, this is one of those desserts where it's super easy, presents beautifully, and the taste heavenly! But definitely precook the sliced apples in the microwave for 3 mins w/ the cinnamon and sugar. Also used 1/4 tsp vanilla & 1/4 tsp almond extract instead of the 1/2 tsp vanilla and only needed 3 big Granny Smith apples. *Either toast the almonds before-hand or closely watch the edges of the torte after adding the almonds.

Brisket with BBQ Sauce

Excellent! Reduced salt by using garlic and onion powders (but added Tbs of kosher salt) and cooked in slow cooker. For sandwiches, we put a layer of avocado slices and it was absolutely delicious!! Somehow the avocado and barbecue flavor go really well together.

Kathy's Delicious Whole Slow Cooker Chicken

Loved this recipe, but did take advice of other reviewers and decreased the amount of olive oil. Also followed recommendations of "Aedos." As leftovers, we made lettuce wraps which consisted of chopped water chestnuts, white rice, the chicken, and hoisin sauce. It was amazing! You can also use spring roll skin/rice paper (cheapest at Asian stores).

Creamy Pesto Chicken and Bow Ties

Wonderful base recipe. Took others' suggestions as well and sautéed the chicken in a little olive oil and minced garlic in addition to the butter. Also added half a bag of thawed and drained frozen chopped spinach and added more milk to make it creamier. To have more veggies, I thinly chopped 2 zucchini and cooked them separately with a little olive oil and black pepper (sauce was salty enough) and added it to the sauce. Also didn't mix the pasta in but served it with the sauce on top. The family loved it!!

Teena's Spicy Pesto Chicken and Pasta

We love this dish. It's especially a great last-minute meal to throw together with some store-bought pesto and rotisserie chicken. Followed the suggestion of another reviewer and added some onion, zucchini, green pepper, & white wine which really gives it an even better flavor. I also sometimes substitute half butter for the olive oil.

Authentic Mexican Breakfast Tacos

I didn't have chorizo or any sausage on hand, but had left-over taco meat, so I used that. It tasted great and was a great way to use up left-overs. Also sauteed some onions before cooking the eggs, per other reviewers. Very yummy and filling!

Flourless Peanut Butter Cookies

Absolutely amazing!! Have made it as is, but this time added the vanilla and it seemed to enhance the flavor. Also made it with organic crunchy peanut butter and placed a Hershey's Kiss on top after removing from the oven and that was superb as well. And lastly, I always halve the sugar (usually use brown sugar) and it's still plenty sweet. *Easiest way is to use a full 28-oz jar of pb from Costco, use 1 1/2 c white sugar & 3/4 cup brown, 2 tsp vanilla and 3 eggs. Baked for 18 mins and voila!
