Ground Beef Enchiladas

This recipe is excellent!! I noticed some reviewers seemed to think something was missing...I always make it with 2 lbs. meat, 1/2 a bell pepper, a little more jalapeno, half the taco seasoning and 3/4 can red, hot enchilada sauce. All those extra ingredients add a lot more flavor. Also, I use flour tortillas instead of the corn. You'll have to use a 10x15 baking dish just to fit it all. It is a lot more delicious this way!!!

Chicken Enchilada Soup II

This soup is absolutely delicious and was a hit with everyone in the family! I would definitely recommend adding a handful of chopped cilantro - it tastes even better!!

Chocolate Zucchini Bread I

This bread is really delicious! I usually make it the night before because it always tastes better the next day. Also, I use milk chocolate chips instead of the semi-sweet. Update 2/11/09: Substituted almond extract and added some freshly grated ginger - amazing!!

Savory Chicken Breasts

This was very, very good!! I took other people's suggestion and used seasoned stuffing mix instead of the bread crumbs and I think it made it taste a lot better. I also combined the stuffing mix with the butter before sprinkling it over the chicken.

Black Bean Vegetable Soup

This was sooo yummy!! Based on some of the other reviews, I added an extra can of black beans, used 3 cloves of garlic instead of one, and used 2 1/2 c chicken broth. I also added extra chili powder and garnished it with cilantro...the cilantro especially made it taste great!!

Honey Mustard Grilled Chicken

I followed the recipe exactly, but doubled the sauce for dipping as suggested by other reviewers. We gave it an Asian twist by wrapping the chicken, some stir-fried veggies, and a little Gochujang (Korean hot pepper paste) in a spring roll and then dipped it in the extra sauce. So delicious!! Suprisingly, the Gochujang really complimented this honey mustard sauce. The chicken is great by itself as is, but we made it an entire meal this way (a rather healthy one too!).

Authentic Mexican Breakfast Tacos

I didn't have chorizo or any sausage on hand, but had left-over taco meat, so I used that. It tasted great and was a great way to use up left-overs. Also sauteed some onions before cooking the eggs, per other reviewers. Very yummy and filling!

Banana Pancakes I

This was great, but I tweaked it as well. I substituted half the milk for buttermilk. I also added 1/8 tsp ground cardamom, which goes beautifully with bananas. Per other reviewers, I used half whole wheat flour, but will use all whole wheat next time. Also, be sure to cook on low to medium so it cooks on the inside without burning the outside. Such a yummy recipe!!

Cowboy Cookie Mix in a Jar

Per other reviews, I also added an extra egg which made the cookies quite moist. When I layered in a jar this was the order: combined the sugar and flour mixture (w/ baking soda, baking powder, & salt) and put that in first; then chocolate chips, brown sugar, and rolled oats. I then put the pecans in a ziplock bag and stapled it to the back of the recipe card. This way if the recipients didn't like nuts in their cookies, they weren't stuck with them.

Baby Spinach Omelet

This was excellent as is. But we like a little more spice around our house, so when I made the second one, I subbed fresh green onion for the onion powder. Also added a dash of fines herbs and topped with some provolone cheese. Delish!!

Too Much Chocolate Cake

I used the satiny chocolate glaze recipe from this site and doubled it. Also, once the cake had cooled a little, I poked some holes in it and poured some sweetened condensed milk and let it soak while it was cooling down. The result was amazingly moist cake!!!

Chocolate Lovers' Favorite Cake

Baked exactly and turned out amazing! The almond extract complemented the chocolate beautifully. Instead of removing from pan after 10 minutes, I let it cool in the pan for about an hour, and then removed it. No problem at all. Superb when topped with chocolate ganache recipe from this site.

Mexican Chicken Corn Chowder

So delicious!! I added a can of garbanzo beans and a can of corn, which gave it just the right texture. The garbanzo beans complemented the soup really well and also gave it additional protein. Also substituted chicken stock for the boulion and water.

All-Around Good Smoothie

I make this all the time, and pretty much any frozen berry goes great with this. I always add a handful of bagged spinach, and you can't even taste it! I make this for my kids with the spinach too (leaving out the soy powder) and they still to this day have no idea that they're drinking something with spinach in it. :)

Broccoli Chicken Casserole I

Great recipe to alter if short on time. I heated up some frozen breaded chicken patties in the oven and cooked the broccoli meanwhile in the microwave. Then used jojojomama's suggestions and mixed the cream of chicken/mushroom with milk, the seasonings, and everything else. Then baked in oven about 20 minutes and served with cut-up chicken on top. Really yummy! The breaded chicken was crunchy enough, that I prob won't put stuffing mix on top next time.

Brenda's Apple and Pomegranate Crisp

Just made it tonight and it was absolutely delicious!! Some reviewers had mentioned that the topping wasn't enough, so I just made sure not level off when measuring and had just enough. Also, in response to other reviewers complaining of the pomegranate being too crunchy, perhaps it wasn't ripe enough? We had no issue with the pomegranate being too crunchy, but it did complement the apples beautifully.

Awesome Slow Cooker Pot Roast

Followed suggestions from "sdgirl" as my roast was 2 3/4 lb. and it turned out amazing (be sure to use low-sodium beef broth). The only thing different was that I rubbed the entire roast with McCormick's Montreal Steak seasoning and then seared it in a little olive oil. Didn't even have to cut the meat as it was just falling off .

Teena's Spicy Pesto Chicken and Pasta

We love this dish. It's especially a great last-minute meal to throw together with some store-bought pesto and rotisserie chicken. Followed the suggestion of another reviewer and added some onion, zucchini, green pepper, & white wine which really gives it an even better flavor. I also sometimes substitute half butter for the olive oil.
