My name is Nikki and I love to cook and workout. Great combination, huh? I work in the restaurant industry and have a newfound passion for cooking. I am currently trying to find a place in the career world, hopefully something to do with sports.

My mom is from the north, my dad, the south. I've found that I can cook up a mean southern dish and also great northern dishes. It's awesome!

Definitely learning to use cooking string was probably the latest triumph.

Chicken and dumplings that came out as mush :(

Gourmet White Pizza
I always make a recipe "as is"my first go at it, so for first timers, it's great. However, I used only 3/4 of the sauce, because it seemed like a lot, and I'm glad I did. Anymore would have been too much. For the calorie conscience people out there, I substituted the regular alfredo with Buitoni light alfredo and the feta with Athenos reduced fat feta. It was still amazing. I thought the garlic was a tad overpowering, so I recommend downing it to 2 tablespoons. I served this with side salads and it was a great, complete meal. Key West Chicken
I thought this recipe was awesome, following several suggestions. For3 breasts (most packs I found in my local grocer came in three), I used 2 1/2 tablespoons of soy sauce, 2 tablespoons of honey, 2 tablespoons of vegetable oil, 2 fresh limes, squeezed dry, 2 teaspoons chopped garlic and I added a "pinch" of cayenne pepper and 1 teaspoon of meat tenderizer to the marinade. It was perfect. I wouldn't have used any less or any more of any of the spices. I added diced red potatoes, tossed in light olive oil, 1 teaspoon of garlic, and a little salt and pepper baked at 425 degrees for 25 min., and steamed asparagus as sides. It was incredible. Even my fiance, who isn't a big fan of healthy eating, loved this!

World's Best Lasagna
This was out of this world! I loved everything about it! I took the advice of soaking the noodles instead of cooking them, and that helped keep them together while serving and eating, a problem I have run into with other recipes. I would increase the sugar just a little the next time around, bc I love it a little a sweeter. Overall this gets two thumbs up and is a must try - At least just once!!!
