Gourmet Sweet Potato Classic

Reviewed: Jan. 12, 2012
EXCELLENT! My husband and I loved this. I did not use the 1/4 cup of butter inside my mix. I probably should have cut down the sugar too from 1/2 cup to 1/4 cup or even 1/8 cup. The brown sugar on top, in my opinion, was good enough. Still came out good but great to hear that you can cut some sugar and it still comes out good. I also had half and half and used instead of the heavy cream. Thx...will definitely add to my receipe box.

Grandma's Lemon Meringue Pie

Reviewed: Apr. 16, 2011
Excellent pie! I used light graham cracker crust instead and since neither myself nor my husband like meringue, we omitted this part and used light cool whip to top it off. We loved it! thank you...

Sausage Pasta

Reviewed: Apr. 15, 2011
Excellent meal! I used light turkey sweet sausage and fresh basil and the can of diced tomatoes--it was basil, garlic and oregano. I chose to keep the spinach on the side..Very flavorful and I did add 3-4 tablespoons of half n half for variation. Delicious!! Thank you!

Excellent! My husband and I loved this recipe. I have to be honest, I do not care much for potato salad but this was delicious. I did not have celery but I did use 1/4 cup of relish. Thank you!

Caramelized Baked Chicken

Reviewed: Feb. 25, 2011
Excellent recipe! I tweaked it after reading other reviews. Instead of using 1 cup of honey, I used 1/2 cup of honey and 1/2 cup maple syrup and used the LIGHT soy sauce. I added all ingredients and cooked in microwave for 3 minutes and I added corn starch (1 tablespoon with just a bit of water) and add to the mix and cooked in microwave for another 2 minutes and then I added this to the chicken. I first cooked the chicken 30 minutes and then I added the sauce and cooked another 30 minutes, while bastsing it in between and sauce did carmelize. Perfect!

Fra Diavolo Sauce With Pasta

Reviewed: Jul. 6, 2010
I personally do not eat shrimp but I made this for my husband and he loved it. I did modify it since most said it needed more spices. I added approximately a tablespoon of Italian seasoning to my tomatoe mixture as well as 1/2 tablespoon or less onion powder. He loved it! Thank you...

Artichoke Chicken

Excellent recipe. I took the suggestions of others and, to make it lower fat, I used 2/4 low fat mayo and 1/4 cup of light sour cream. I had reduced fat parmesan cheese and used minced garlic. of course, I did season my chicken with salt and pepper and thyme. Delicious!!!

Lemon Cream Pasta with Chicken

Reviewed: May 20, 2010
Great flavor...I did make a few changes. Just for simplicity sake..I actually cut my chicken into pieces and cooked over stove top (1 tblsp. EVOO) and then added my seasonings (took about 10 min.). I cooked my pasta as noted below and to cut some of the fat, I used half and half vs. heavy cream. DELICIOUS!

Jalapeno Popper Spread

Reviewed: May 9, 2010
WOW! What an easy and tasty appetizer. I typically modify for lower fat - I used 1 fat free cream cheese and 1 1/3 reduced fat cream cheese. I also used 1 cup fat free mayo and used 4-5 oz. of diced jalapeno. As others suggested, I topped it with 1/2 cup parm. cheese and 1/2 panko and baked it at 400 degrees for 20 minutes. It was delicious and my family ate this up in no time. Thank you!

Angela's Awesome Enchiladas

Reviewed: Apr. 17, 2010
GREAT Recipe!!! I only gave 4 stars because I took a short-cut. My husband was hungry. Big smile! I used chopped rotisserie chicken (approx. 1 lb) so I halfed all the ingredients. I did not have flour tortillas nor did I have black olives so I used corn and omitted the olives. Flavor was great and we both enjoyed this meal. thank you!
