About this Cook
I am a married mom of two wonderfully rowdy and hungry boys. My husband and sons love good food and all have hearty appetites. I love to read and cook. My husband and I are also involved with our sons' little league baseball teams in the spring and summer. When cooking for the family, I look for hearty comfort foods, which are always a big hit at our house. My husband is also a recently-diagnosed diabetic so we also like to eat meditteranean-inspired and other diabetic-friendly foods.
My favorite things to cook
I love to cook pastas (especially lasagna), soups, salads, roasts and casseroles. I also really enjoy smoking meats and other foods. Nothing beats a good barbeque!!!! We are also big fans of Mediterranean-inspired cuisine.
My favorite family cooking traditions
Every year for every holiday, for as long as I can remember, my family has gathered for a giant potluck. Everybody brings something different to contribute to the meal. It's a great way for the family to reconnect and enjoy each other's company, not to mention a great opportunity to sample all of the different delicious dishes that everybody brought.

Making a creamy Carbonara without scrambling the eggs!

Soupy fudge. The flavor was good - you just had to spoon it up.

Watermelon Fire and Ice Salsa
Absolutely delicious and VERY easy to make! Very fresh flavors. Let sit for awhile to allow the flavors to blend. Perfect with salty chips!

Taco Dip I
I took this to a New Year's Eve party and it was a hit! Make sure the cream cheese is room temp before mixing. Thanks for sharing!
