Banana Chip Muffins I

This is the best use for overripe bananas! Mixes up quickly and makes exactly one dozen if I use my cupcake scoop. The first time I made these they had a strong baking powder flavor so I cut the baking powder in half and they still rose just fine. Also cut the baking time to 18 minutes or they will be overcooked. My family loves these and they are gone fast. Love that there's not much sugar in the recipe. They are moister the second day.

Ricotta Breakfast Pancakes

This made A LOT of pancakes...perfect for my family of 6. I was skeptical that a pancake recipe with no eggs and only three ingredients would be good, but they were delicious. The nice thing with these is that they are fluffy but the inside is cooked, unlike with many other pancake recipes I've tried where the middle is still gooey and the outside is done. I didn't change anything, but maybe next time I would add a little vanilla. I had lots of leftovers, which I'll freeze and then my kids can pop them in the microwave on school mornings.

White Bean Chicken Chili

This was great and the whole family loved it. I did substitute a jar of salsa verde and added the cornstarch/milk mixture as others had suggested. A few other minor tweaks: I cooked the onion and garlic in the oil, then added the spices (I used cumin and chili powder) and cooked for 1 minute. Then I added the broth, canned tomatoes and green chiles and brought it to a boil. Next I added cubed raw boneless skinless chicken breast, covered and let simmer for 10 minutes. Finally I added a bag of frozen corn, the salsa verde, two cans of beans and the cornstarch and let the whole thing simmer for another 30 minutes. Yummy!

Slow Cooker Ham

I made this for Christmas dinner...it was soooo good and so easy! I had a 6.5 lb. spiral ham which I cooked on low for about 6 hours at which point it was falling off the bone. I used half the amount of sugar called for and it came out great, we don't like it too sweet. My family said this was the best ham they've ever tasted.

Beth's Orange Cookies

Tried these as a Christmas cookie and the family really liked them. These are cake-like, as I have found with any cookie that has sour cream in the batter. The yield on this recipe is correct...I got 6 dozen cookies! The frosting however, I had to triple because it wasn't nearly enough and I wasn't over-frosting, mine looked just like the ones in the picture. Next time I'll probably half the dough recipe and double the frosting.

Fabulous Fried Cabbage

My whole family loves this! I don't use the broth and we haven't really noticed a difference. I add the chopped cabbage to the butter in a skillet and sprinkle with sea salt. Make sure you stir occasionally so that you don't burn your cabbage, if you do it right you should have some browned bits incorporated throughout. Really tasty and slightly sweet. Love it!

Brazilian White Rice

My husband is from Brazil and he says this is as close to the rice his Mom makes as he has had. I only make my rice this way now and it pretty much goes with any dish you are serving. If you're looking for a rice with a lot of flavor, you might want to tweak the recipe to your taste because this is just a kicked up version of plain white rice. I always add plenty of salt to the boiling water which helps alot. Turns out great every time I make it!

Fresh Raspberry Pie

My neighbor gave us some raspberries from her garden and I wasn't sure what to do with them so I decided to try this recipe. It was really tasty and my family really enjoyed it. I think the glaze was perfect but my husband (who is South American and doesn't have the sweet tooth us US folks do) thought it was too sweet. The only complaint I personally had was that my raspberries were very juicy and the pie started to get runny the second day. Otherwise, this is a winner!

Best Big, Fat, Chewy Chocolate Chip Cookie

These really are the best...and I have tried lots of chocolate chip recipes. My family loves soft cookies, so these are great. They are huge, so don't expect to get too many...I usually end up with 15, not the 18 the recipe states. The only problem I have ever found with these is that since they're made from butter they don't last too long, but fortunately that's not usually a problem since they're so good!

Dump Bars

This is my go-to recipe when I need a desert and want to use items that I always have on hand. I have made this recipe many, many times and every time it has been a hit. I bring this to potlucks or barbecues quite often and am always asked for the recipe. I like to use half milk and half white chocolate chips on the top, or once in awhile I'll make some chocolate frosting and omit the chips in the recipe. These always come out moist and perfectly done, and I live at a high altitude so its hard to find brownies that cook correctly here.
