Jen's Heavenly Egg Salad

Ok. This is my first review and I've been hesitant to place it because who am I to say...? Anyway, I had to comment on this one. If I'm going to use a recipe, I like to follow it exactly. This endeavor is difficult when the recipe reads, "1/2 lemon, juiced". I juiced half a lemon and, against my better judgement, added the full 3 + tablespoons it yeilded. My dressing was then so watery and SOOO tangy, making a very runny and tart egg salad. I guess I'm still confused why a recipe would call for so much lemon when it already calls for so much (vinegar-based) mayo. That's a lot of acid! I ended up adding 6 MORE eggs. In the extra time I had cooking my second batch of eggs, I ended up adding 3 tablespoons FINELY diced red bell pepper for color and crunch as well as 1 stalk FINELY diced celery stalk, 1 clove of garlic, minced and 1 large basil leaf THINLY sliced. In the end this made a DELICIOUS, not to mention cheap, lunch on whole wheat with baby spinach. Thanks!

Fried Rice with Cilantro

Awesome Sausage, Apple and Cranberry Stuffing

This is amazing! All of the different flavors go together perfectly. I used fresh herbs (as I always try to). I cooked this outside of the bird and after reading other reviews about making sure to add enough/extra broth when cooking outside of the bird so it doesn't dry out, I accidentally added a little too much extra liquid, then overcompensated by overcooking. Even with my mistakes, this was a very, very delicious dish.

Ravioli Dolci (Sweet Ravioli)

Okay. I'm rating this recipe a 5 because anyone who tasted them even without knowing how much work went into them, gave them 5 stars. I made them for an Italian themed espresso and cookie night when some friends from where I lived in Padova, Italy were coming to the states to visit. They definately passed as "Italian" and everyone loved how they tasted. I was frustrated with how long they took to make and the fact that the dough was impossible to work with after being out of the fridge for even 5 minutes. I had to keep popping it in the freezer to make it cold enough to be workable. This added to the time-consuming aspect of the recipe. I am going to try it again for a gallery opening event I'm going to tomorrow night, but this time I'll take the advice of other reviewers and make the cuts after the two sheets are layed on top of one another with the filling already in between. Hopefully this will cut down the time and frustration and not take away from the pleasing taste!

Spinach Stuffed Chicken Breast

This was very very good. I used prepared basil pesto in place of fresh garlic and also added some paprika. Instead of the cheese called for (rarely have that on hand) I used low moisture mozzarella and freshly grated parmesan. I threw in a little lemon zest, too. I didn't bother marinating the chicken breasts in buttermilk as some suggested, since I've always been happy with the quality of chicken I buy. This recipe fully deserves the 5 stars! I just can't help but tweak. Delicious.

Rosemary Ranch Chicken Kabobs

I made these in the grill pan on top of the stove since the weather was too icky to go out and use the real grill. The marinade is SOOOO tasty. I ended up simmering it for 10+ minutes and using it over rice. Delicious.

Chicken Melt

The day prior to making this recipe I had roasted a large whole chicken. I decided to use some of the leftover chicken to make this recipe. I actually still marinated, like called for and then rewarmed the already cooked chicken. It was very very tasty.

Gourmet Chicken Pizza

We really love this pizza. If you leave your tomatoes in whole slices, you save time chopping and it's just as tasty. We use far less dressing than what is called for and it is still delicious!

Fluffy French Toast

I found that this lacked the flavor that I remember french toast having when I was a kid. I did add vanilla and wish it had been a little sweeter, since we don't like maple syrup around out house.

Chocolate Trifle

I made this for my sister in law's birthday dinner. Instead of using a big serving bowl, I made individual trifles in stemmed wine glasses. I remember that I added an extra layer... maybe of a candybar or something. They were a huge hit and made a creative alternative to birthday cake!

Easy Slow Cooker French Dip

AMAZING! We made sure to use a good dark beer. These were to die for. With some thinking and experimenting, the left over jus can be tweaked and used for french onion soup the next day. My husband even enjoyed french onion soup. WOW!
