Spinach Stuffed Chicken Breast

This was very very good. I used prepared basil pesto in place of fresh garlic and also added some paprika. Instead of the cheese called for (rarely have that on hand) I used low moisture mozzarella and freshly grated parmesan. I threw in a little lemon zest, too. I didn't bother marinating the chicken breasts in buttermilk as some suggested, since I've always been happy with the quality of chicken I buy. This recipe fully deserves the 5 stars! I just can't help but tweak. Delicious.

Ravioli Dolci (Sweet Ravioli)

Okay. I'm rating this recipe a 5 because anyone who tasted them even without knowing how much work went into them, gave them 5 stars. I made them for an Italian themed espresso and cookie night when some friends from where I lived in Padova, Italy were coming to the states to visit. They definately passed as "Italian" and everyone loved how they tasted. I was frustrated with how long they took to make and the fact that the dough was impossible to work with after being out of the fridge for even 5 minutes. I had to keep popping it in the freezer to make it cold enough to be workable. This added to the time-consuming aspect of the recipe. I am going to try it again for a gallery opening event I'm going to tomorrow night, but this time I'll take the advice of other reviewers and make the cuts after the two sheets are layed on top of one another with the filling already in between. Hopefully this will cut down the time and frustration and not take away from the pleasing taste!

Awesome Sausage, Apple and Cranberry Stuffing

This is amazing! All of the different flavors go together perfectly. I used fresh herbs (as I always try to). I cooked this outside of the bird and after reading other reviews about making sure to add enough/extra broth when cooking outside of the bird so it doesn't dry out, I accidentally added a little too much extra liquid, then overcompensated by overcooking. Even with my mistakes, this was a very, very delicious dish.

Jen's Heavenly Egg Salad

Ok. This is my first review and I've been hesitant to place it because who am I to say...? Anyway, I had to comment on this one. If I'm going to use a recipe, I like to follow it exactly. This endeavor is difficult when the recipe reads, "1/2 lemon, juiced". I juiced half a lemon and, against my better judgement, added the full 3 + tablespoons it yeilded. My dressing was then so watery and SOOO tangy, making a very runny and tart egg salad. I guess I'm still confused why a recipe would call for so much lemon when it already calls for so much (vinegar-based) mayo. That's a lot of acid! I ended up adding 6 MORE eggs. In the extra time I had cooking my second batch of eggs, I ended up adding 3 tablespoons FINELY diced red bell pepper for color and crunch as well as 1 stalk FINELY diced celery stalk, 1 clove of garlic, minced and 1 large basil leaf THINLY sliced. In the end this made a DELICIOUS, not to mention cheap, lunch on whole wheat with baby spinach. Thanks!
