Pork, Broccoli and Rice Casserole

Reviewed: Nov. 20, 2008
We're not big on one-dish casserole type meals, but we had a lot of meat leftover on our rotisserie chicken that we decided to use in this recipe. The curry is light and not overpowering. I thought the mayo added a lot of flavor. I used fresh brocoli and it actually got sort of soggy. (I'm used to just lightly steamed brocoli.) Anyway, I can't imagine making this with frozen brocoli. Then it would be super soggy. Overall we enjoyed it a lot and will make it again!

Tasty, but turned out a little greasy. Still a hit around here!

Better than red-sauce enchiladas with some modifications suggested by other reviewers...including corn tortillas.

Our go-to recipe! No matter what we are stir frying, we use this cornstarch mixture, and it turns out perfectly!

Moroccan-Style Stuffed Acorn Squash

Reviewed: Sep. 23, 2008
Oh my word, this was amazing. The flavor combinations were perfect! I have been looking for recipes that can double as a vegetarian main dish for myself and a side dish for my husband at the same meal where he eats meat and I may not. This is absolutely perfect for that purpose! He loved it, I loved it, and our 1.5 year old loved it. (Now I'm afraid any other dish I find will pale in comparison.) Thank you!

Honey Nut Granola

Reviewed: Sep. 9, 2008
I didn't have sunflower seeds and I followed the suggestions to use olive oil and to add coconut and maple syrup. This is absolutely scruptious. It will be a regular in our house.

Tomato Barley Soup

Yummy! I added fresh basil and pinto beans. It ended up tasting sort of like a Tuscan bean soup. Very good.

These were pretty good, but for some reason quite tough and hard to chew. I could have done something wrong...

Baked Dijon Salmon

We normally always marinade our salmon in a home made teriyaki sauce, but were looking for a change. We were not disappointed! This was very good and a nice change!

Easy Slow Cooker French Dip

Reviewed: Apr. 30, 2008
AMAZING! We made sure to use a good dark beer. These were to die for. With some thinking and experimenting, the left over jus can be tweaked and used for french onion soup the next day. My husband even enjoyed french onion soup. WOW!

Chocolate Trifle

Reviewed: Apr. 30, 2008
I made this for my sister in law's birthday dinner. Instead of using a big serving bowl, I made individual trifles in stemmed wine glasses. I remember that I added an extra layer... maybe of a candybar or something. They were a huge hit and made a creative alternative to birthday cake!
