Dark Chocolate Cake I

This was the best cake I have ever made! And only because once I started mixing I realized how many things I was out of I made a few substitutions with perfect success: I only had one stick of butter so I added a half cup of natural applesauce. I was short one egg so I added a tablespoon of mayonnaise. Because someone recommended it and I'm obsessed, I substituted brewed coffee for the water. So perfect!!

Honey Wheat Sandwich Rolls

Yum!! I used a 3" cutter and they were large hamburger bun size. I would use a smaller cutter for lunch sandwiches.

Banana Oat Muffins

Used 3/4 c whole wheat, 3/4 c unbleached, raw sugar and almond milk. Added chocolate chips. Refrigerated overnight in muffin tins. Placed in cold oven while preheating. Once oven reached 400, baked 20 minutes. Perfect and moist!!

Carrot Cake III

This is the "best carrot cake ever" from my husband's grandma who bakes regularly. I changed the sugar quantity to 3/4c white and 3/4c brown. Yum!!

Veggie and Cilantro Hummus Sandwiches

I make just the hummus and always have some on hand around our house. We eat it on a rgular basis with toasted pita points. It makes a great snack for my 2-year-old.

Black Bean and Salsa Soup

We blend only about half the beans and leave the others whole. Our 2-year-old and 8-month-old love to pick out the whole beans and eat them before they finish off the soup. My husband loves this especially. He always uses the leftovers to dip chips in for a midnight snack.

Lentil and Sausage Soup

Crunchy Rice Casserole

I actually thought this was pretty good. It served its purpose of being easy, quick, and tasty. You probably can't call it healthy and it is not gourmet, but it made us happy! I would definately double the ketchup next time. Having used sharp cheddar it was quite somewhat salty and quite savory and could have used the balance of more sweet ketchup.

Pork, Broccoli and Rice Casserole

We're not big on one-dish casserole type meals, but we had a lot of meat leftover on our rotisserie chicken that we decided to use in this recipe. The curry is light and not overpowering. I thought the mayo added a lot of flavor. I used fresh brocoli and it actually got sort of soggy. (I'm used to just lightly steamed brocoli.) Anyway, I can't imagine making this with frozen brocoli. Then it would be super soggy. Overall we enjoyed it a lot and will make it again!

Moroccan-Style Stuffed Acorn Squash

Oh my word, this was amazing. The flavor combinations were perfect! I have been looking for recipes that can double as a vegetarian main dish for myself and a side dish for my husband at the same meal where he eats meat and I may not. This is absolutely perfect for that purpose! He loved it, I loved it, and our 1.5 year old loved it. (Now I'm afraid any other dish I find will pale in comparison.) Thank you!
