Easy Mushroom Rice

I used a combination of 1 cup brown rice and a 1/4 cup wild rice, a 14.5 oz can low sodium beef broth, French onion soup and a can of mushrooms, drained. I left out the butter and baked it uncovered for 90 minutes, stirring about half way through. Couldn't ask for an easier recipe than this and pretty tasty too. It had a funny aftertaste though; I think I'll try it with 2 cans of low sodium beef broth and a couple teaspoons beef bouillon next time, with a dash of either Soy Sauce or Worchestershire. I think it would taste better if you used fresh mushrooms sautéed in a little olive oil as well and toppled with some thinly sliced green onions or fresh parsley. I am on a quest to find a tasty, simple to prepare, rice side dish to replace the processed boxed varieties that are full of chemicals and preservatives!

Cabbage and Noodles with Ham

I enjoyed this but my family was not impressed. I thought it was a good way to use up the leftover ham I had from Christmas. I happen to love cabbage and I keep trying different recipes with cabbage on my family hoping they will come around.

Awesome and Easy Creamy Corn Casserole

I was expecting somthing out of this world, but it was just OK. I think it needed salt. Kind of bland and a little soggy. Followed the directions exactly but had to bake it for a full hour before it was done in the center. Not bad, but not the ultimate cornbread; my search continues.

Quick and Easy Green Chile Chicken Enchilada Casserole

Family RAVED!!!!! I used leftover cooked chicken meat which cut down the prep time significantly. I also fried the corn tortillas in a little oil until soft and drained them on papertowels to soak up the exces oil. It came together quickly and tasted delicious! Served with my favorite Spanish Rice recipe and my favorite refried beans recipe! The kids topped theirs with sour cream but in my opinion it doesn't need it. It's rich and creamy on it's own and YUM-YUM-YUMMY!

Famous Pork Chops

I thought they weren't crispy enough and the Ritz crackers were too sweet tasting for pork chops in my opinion. I like a coating that is crispier and with a more savory flavor. I think I will stick to my traditional breading using Italian Seasoned breadcrumbs. I think oven frying them in Canola oil produces a crisper crust than using the butter and is healthier as well. We didn't hate them but they weren't good enough to become a family favorite or replace my old standby made with a breadcrumb coating.

Pumpkin-Oatmeal Raisin Cookies

I had some leftover pumpkin to use up from a pumpkin bread recipe and gave these a try. Followed the recipe exactly as written except I used pecans instead of walnuts, only because that was what I had on hand. I used my cookie scooper to make 1-1/2 inch sized balls of dough. I baked the cookies for 14 minutes and they turned out moist and chewy in the center and lightly crisp along the edges. My kids loved them!!! Very tasty!!!

Chili Dog Casserole I

My kids liked this one a lot. I think I prefer the traditional way of making a chili dog myself. It's not like this recie makes it any easier to make a chili dog. I gave this a try because I made a big pot of chili for dinner a few nights before and I wanted to use up the left-overs and this sounded like a good way to do it. Not horrible but not an all time favorite either. Might make it again if my kids request it.

The Best Chicken Fried Steak

Don't know what happened with this, and I had such high hopes! All the breadding fell off the meat and it made a huge mess. This did not turn out well for me at all. It was a dinner disaster :+(

Buttermilk Parmesan Potatoes

Fabulous dish!!!!! I was a bit concerned when making this because the flour/butter roux mixture was VERY thick and then when I added the shredded cheese to it, it got even thicker. Not to worry, because once it baked in the oven it turned out fabulous!!!!!! It was creamy and luscious and the potato cheese flavors were just right! My family loved it!!! I made only one small change to this recipe. I used diced hash browns (thawed) instead of going through the extra time and work of cooking potatoes. I will be making this dish often!!!!!

Parmesan Mushrooms

I used to make this for my husband when we were first married, except I topped this with grated Cheddar cheese instead of Parmesan cheese. This was his absolute FAVORITE side dish! I misplaced the recipe and he has asked for this many times over the years. I am thrilled that I stumbled across this recipe!!!!! It is delicious with Cheddar but I want to try this with Parmesan cheese and see if it is as good. Will let you know what the verdict is!!!! Can't wait to surprise my husband this weekend! UPDATE: Made this last night and this is even better with Pamesan cheese. I topped it with minced fresh parsley and it was gobbled up in no time flat!!!! If you love mushrooms you MUST try this!

Ham and Cheese Crescent Roll-Ups

DELICIOUS! I used Havarti cheese instead of Cheddar because it was what I had in the fridge. I brushed the tops with melted butter and then sprinkled a little garlic powder on top. Baked them until golden brown. YUM-YUM-YUM!

Farmer's Casserole

Followed this recipe exactly as stated except I used 1/2 a grated onion instead of the green onions because that was what I had on hand. This turned out just OK; not great but not bad either; just kinda ho-hum. I usually make a breakfast casserole that uses crescent rolls and no potatoes that I love and I think I will continue use it instead of this recipe. I think the combinatin of the evaporated milk and the potatoes gave this a strange texture that we did not care for. Not really sure why the recipe calls for the evporated milk instead of just using regular milk. This also took much longer to cook than stated in the recipe. I had to bake it for an hour and 30 minutes before the center set up. Sorry, this one is not a keeper.

Chicken and Cheese Enchiladas

I used a can of regular Cheese soup and a can of the Fiesta Cheese soup for the sauce. I also sprinkled grated cheddar on top. I liked the filling much better than the sauce topping, it was too processed tasting. I will keep looking for a better Chicken Enchilada recipe, this one missed the mark for us. Not bad but not great either, just so-so.

Artichoke Pie

My husband and I love all things Artichoke but this missed the mark. I used 2 Jars of Trader Joe's marinated Artichoke hearts and followed the recipe as stated. It was just OK not bad but nothing really great either. I really had high hopes that this would be better.

Mushroom Rice Pilaf

I am on a quest to try and eliminate as much processed food as I can from my family's diet. I have been moving away from the boxed & canned processed foods more and more and I am always looking for easy, tasty side dishes that don't use a lot of processsed ingredients in them. This turned out REALLY good. My kids liked it better than Rice-a-roni. I used fresh minced parsley instead of dried and diced red bell pepper instead of the green bell pepper because it was what I had on hand that night. I love how easy this was to prepare and how suprisingly tasty it was. My only complaint is the Chicken Buillion; it has MSG in it which I try to avoid. Next time I will substitute with Garlic Powder instead and try it with brown rice to make it even more nutricious. I served this with BBQ'd Honey-Terriyaki Beef Kabobs and a large green salad. Hands down it was the best meal of our camping trip! Thanks for the great recipe Anita!

Cheese Onion Garlic Bread

Not a bad recipe but if you are not a big fan of grilled onions you probably won't like this one too much. The grilled onion flavor really dominates this. Plus it is very fattening, a whole cup of mayo and a cube of butter, yikes! So I guess I'm still on the hunt for that really delicious cheesy bread recipe!

Mother's Schwein-a-braten (Roast Pork)

A family favorite! Inexpensive to make, easy to prepare, and uses the simplest of ingredients that everyone will have on hand. I always wait until pork roast goes on sale at the grocery store to make this. Since meat is the biggest expense in my grocery bill, when pork is on sale I pull out all my pork recipes for the week, when beef goes on sale, I pull out my beef recipes, and when chicken goes on sale, you guessed it, we have chicken. With everyone trying to economize these days this is a good recipe to feed your family a nutricious, tasty meal for very little money. It makes a lot so we always have leftovers and it reheats very well. Serve over mashed potatoes, rice, noodles or potato dumplings and a veggie to make this meal complete. Hope you enjoy it as much as we do!
