My cooking triumphs
My friends and family call me the Queen of Appetizers. I NEVER cook anything that is low cal. That's why everything tastes so good I think. I'd rather eat less of the real thing than more of something that's all precessed chemicals. I use all whole foods, real butter, real mayo, sour cream, and whole milk. There's nothing better than a hot cup of coffee in the moring that has a dollop of heavy whipping cream in it! YUM! In my opinion if you take the fat out of a food you have to replace it with artifical chemicals to make it taste good and how can that be better for you than the whole food, the way nature intended. I also try to incorporate a lot of veggies into our evening meals.
My cooking tragedies
I've had more than my fair share of cooking disasters. One particular dinner disaster that sticks out in my mind was when a co-worker and I were talking about Meatloaf recipes and she told me that she used rice instead of breadcrumbs in her meatloaf. She thought that it kept the meatloaf moister. Sounded good to me so I tried it. She neglected to tell me one tiny bit of importatnt information, that the rice needed to be cooked first. You should have seen my husbands face when he took that first bite of meatloaf. At first he thought that his teeth were falling out, all those little hard grains of rice felt like he was chewing up his teeth. Poor guy!

Potato Leek Soup I
I omitted the butter and fried up a 1/4 lb of bacon. I sautéed the leeks in the bacon fat for extra flavor. I cooked this in my crockpot and ended up using 3 lbs. of potatoes, 1 carton plus 1 can of chicken broth to get the right consistency. I also used my emersion blender to purée the soup because I wanted a creamy not chunky soup. I cooked the potato leek mixture in 1 carton of chicken broth and once I puréed it it seemed too thick, so I added an additional can of broth and then it was just right. I didn't add the wine since I didn't have any on hand, but I think it would add nice flavor and will add it next time if I have some on hand. This soup was thick, rich and creamy, we didn't miss the cream at all. I served each bowl with a dollop of sour cream and the cooked bacon bits with garlic bread on the side. YUMMY!

Apple Pie Oatmeal Breakfast
I made this as stated except I used 2 cups apple juice and 2 cups water. I used 2 really large Fuji apples instead of the 3 listed in the recipe, and I added a teaspoon vanilla and 1/4 cup brown sugar. In my opinion this turned out way too soupy, next time I will reduce the amount of liquid to 3 cups (1/2 water & 1/2 apple juice) instead of the 4 cups of liquid stated in the recipe. The flavor was very good; I don't think I will add the brown sugar next time either, I think the apple juice will give it enough sweetness. I wanted it on the sweet side this first time to ensure my kids would eat it but next time I will leave out the addtional sugar. They can always top it with some brown sugar or maple syrup when they eat it. Plus the extra sugar made my blood sugar spike and I got real jittery mid-morning, nixing the sugar next time. I sprayed my crockpot with cooking spray and had just a bit of sticking to contend with but nothing major, I had good results with this; will make again with a few tweeks.

Ham and Cheese Breakfast Tortillas
At our house we call these breakfast burritos. I substitute bacon, sausage and sometimes leftover roast beef that I cube up. Some times I will add leftover cubed cooked potatoes, what ever I have in the fridge gets used up when I make these. If I have a can of diced green chilis I throw that in for more flavor as well. My family prefers bacon in these, so I cook up the bacon and then cook up everything else in the same pan in the bacon fat. Decadent but very yummy! The bacon drippings give this great flavor! My sons and husband also likes a dallop of sour cream added to their burrito!
