Salsa Chicken

I have never cooked such tender chicken in the oven EVER! Even after re-heating the day after, the chicken was so tender & juicy, I had to check to make sure it wasn't undercooked, lol. I added some chopped onions & bell peppers to the pan and had to improvise w/the taco seasoning (mixed salt, pepper, garlic powder, cumin & cayenne). Skipped the cheese for a healthier option, but ended up cooking it for 45 minutes total since my chicken breast were huge.

Trevor's Sizzlin Sweet Mustard BarBQ/BBQ Sauce

I'm not even a fan of BBQ, but this sauce is amazing! Spicy, sweet & tangy. If your looking for a great mustard/bbq sauce that goes well with everything, than you must try this stuff.

Cube Steak Parmesan

OMG - this is the only way to make cubed steaks. I've never had a good cube steak before and these were delicious. We used about yr old frozen venison and it came out wonderful. The key is to only brown the steaks in the pan for 1-2 minutes on each side and to allow most of the cooking to take place in the oven. I baked 1/2 w/sauce (as per another reviewer) & 1/2 the way the recipe stated. They both came out great. Another idea: Omit the tomato sauce and make sandwiches using this recipe. Top w/your favorite cheese or sauce.

Quick Pumpkin Pudding

I agree with other reviewers - I can't believe anyone could give this anything but 5 stars! However, I almost made a big mistake - check your pudding package for the ounces. I had to use 2 packages (the smaller ones are about 1.5 oz). I'll be making this throughout November as a healthy, delicious dessert - I used 2% evaporated milk. This would also be great scooped into a graham cracker crust....I think I'll be trying that next! This is definitely for those that like Pumpkin Pie filling, but not the crust ;)

Green Bell Peppers stuffed with Tomato Lentil Couscous

YUMMMMMY! This is a fun & simple dinner. I cut the peppers in half (like another reviewer recommended) - they're easier to fill and I think they cook better this way. I always use just plain couscous, too (it's more versatile). Next time we have some of our vegetarian friends over, I'll make some without the meat. This receipe has really made me a fan of green peppers!

Cucumber Sandwiches III

OMG!!! My husband and I have been eating these sandwiches for the past few days and they are delicious! We had 6 cucumbers leftover from Thanksgiving and are trying to find creative ways to eat them all. This is the best way by far!

Frogmore Stew

Quick, easy and delicious! Everyone loved it - I actually made it for some last minute houseguests on Easter Sunday. We live near the beach, so it was perfect for a casual outdoor Sunday dinner. We even covered the table with newspaper and everyone just dove in! It was the most simple and easy meal to prepare, cook and clean up after! I've got to make this when the kids come to visit - they're gonna love it!

Mexican Baked Fish

I was a little hesitant on making this...sounded like something a college kid would make up, but I'm glad I did. This was delicious! The acidity in the salsa took away any fishy taste and it was sooooo easy. We've made this twice - once with trout and once with redfish. I bet this would be good rolled up in a flour tortilla...I think will try that next time :)

Gingery Fish Kabobs

Hummmmmmmy...By far, the best grilled fish recipe I've ever had! I forgot to marinade the fish (used freshly caught grouper), so I made sure we kept basting the fish every few minutes on the grill. We placed the kabobs on top of a grilling plate and I'm glad we did - a few pieces would fall off every time we rotated them on the grill. I also added whole mushrooms to the recipe - thought this was a must! We had guests over that aren't big fish eaters and they devoured these...make sure to have atleast 3 kabobs per person! This is now my #1 fish recipe and will definitely try it with other fish and chicken.

White Fish Provencal

Delicious, Quick & Easy! I didn't have olives handy, so I used 2 tablespoons of capers. Used Flounder for fish and had to cook 5-10 minutes longer. This recipe is definitely a keeper - served over mashed potatoes and my husband and I loved it. I'll have to try it with the next type of fish he catches.

Baked Ziti I

I've made this receipe so many times and it never fails to impress. It's even better if you use ground Venison....delicious! Even the kids love it! I add about 1/4 cup red wine to the meat, 5 min before adding the sauce. This is my only baked ziti receipe I'll ever need!

Delicious & easy...what more could you ask for? Next time I'll add more wine and maybe a little flour to thicken up the sauce. Great w/garlic mashed potatoes!

Spinach and Cheese Stuffed Pasta Shells

Wish I had read the reviews first - I definitely would have either left out the fennel seeds or added less. Otherwise, It was excellent! Next time, I'll buy 1 box of 24 shells for the receipe and just overstuff them. I could see using a little less spinach and more garlic. Would definitely make again - My husband wants to add shrimp to the receipe next time! YUM!!!!

Slow Cooker Mediterranean Stew

I have, what I think is, an avg size crock pot. I ended up leaving out 1/3 of the squash, 1/2 the okra and some eggplant to fit it all in! Definitely different. A good way to cook eggplant. I served it w/gnocci (potato pasta). My husband liked it, I thought the seasonings were off - and I love all those in the receipe. We had left overs, so the next day made Couscous and made a veggi burrito w/the stew, cheese, couscous and Louisiana hot sauce - Now THAT was GOOD!!!! A good, very healthy receipe, but you'll probably need to make little changes for it to suit your taste.

It's Chili by George!!

I couldn't imagine making Chili any other way! I added a lot more Cayenne Pepper to it and used "Garam Masala" seasoning (mix of coriander, blk pepper, cumin & cinnamon). It really gives it some spice. Thanks George!
